Food quality-safety has become the focus of the attention of the people, thegovernment continues to strengthen the force of food quality-safety supervision, butthe situation of food quality-safety remains grim. Among them the food productionprocesses are considered of the largest potential danger, and the most seriousproblem is the illegal use of food additives in the food production processes. Foodquality-safety accidents caused by the illegal use of food additives which occursfrequently in the food production processes are the serious threat to the health andsafety of people’s life, and bring significant economic losses, while reducingsignificantly the credibility of the government, and becoming a threat to societystability and national security. Therefore, we must learn from the lessons of theprevious accidents caused by the illegal use of food additives, aware fully of theexisting problems of the supervision of food additives in food production processes,draw on the advanced experience of the supervision of food additives overseas,improve the supervision of food additives in food production processes, in order toprotect the food quality-safety of China.The paper includes six sections: introduction, brief description of food additivesand case study, current situation of the supervision of food additives in foodproduction processes of China, problems and analysis of the supervision of foodadditives in food production processes of China, advanced experience of thesupervision of food additives overseas, countermeasures and suggestions ofstrengthening the supervision of food additives in food production processes of China.In the paper, we make the empirical analysis of the illegal use of food additivesoccurred in China in recent years via case analysis, introduce the theory of thesupervision of the food quality-safety, expound systematically the current situationand problems of the supervision of food additives in food production processes ofChina, and compare with the methods of the supervision of food additives in someforeign countries. Finally, combining the above analysis, we give our countermeasuresand suggestions of strengthening the supervision of food additives in food productionprocesses of China from the improvement of institutions, the construction of legal standards, the enhancement of the level of supervision, etc. We hope that this paperwill be a useful reference for the supervision of food additives in food productionprocesses of China.
