As one of the world’s four fruits, apple is produced in93countries and regions all overthe world according to statistics. China is a great apple producer. Both its planting area andyield ranked first in the world, which are still increasing in recent years. The planting area is2.17million hectares and the yield is35.985million tons in2011. But apple production inChina is still in the typical small-scale planting mode, and the large-scale planting iscomparatively rare. So it’s so necessary to insight into the impact and challenges for farmersbrought by market changes in China economic transition. This study aims to explore therepresentative apple industrial value chain, using the value chain tool to analyze theconstruction of the typical apple industrial value chains, to explore how farmers can getbenefit from the circulation system and then provide suggestions for rural public goods supplyfor the government.The paper is instructed by the related value chain theory and draws lessons from existingresearch methods and important conclusions in the study of literature review. Use bothqualitative and quantitative analysis methods to analyze the development status of the appleindustrial value chain, taking Shaanxi and Henan as a case.Analyze the effect of Chinese apple industrial value chain by value-added path andvalue-added results, and calculate the efficiency by DEA method. According to the twodimensions results, the countermove and suggestions to improve the apple industrial valuechain are put forward.The conclusions of the paper are as following:First, Chinese apple quality has a great improvement. But compared with developedcountries, there is still much room to rise. The investment, the quality of the fruit and farmersrevenue are higher in Shaanxi than in Henan.Second, there are three typical apple industrial value chains:(a) Farmers–Agriculturalcooperatives-Supermarket-Consumers;(b) Farmers-Agricultural cooperatives–Merchants;(c) Farmers-Agents-Fruit stores-Consumers. The farmers occupy the most added-valuepercent in chain ‘Farmers–Agricultural cooperatives-Supermarket-Consumers’, as18.2%,and occupy the least in chain ‘Farmers-Agricultural cooperatives–Merchants’, as3.01%.That means whether to join the cooperatives may not play a decisive role with different expectations, and the chain ‘Farmers–Agricultural cooperatives-Supermarket’ will have agreat potential for developing.Third, apple industrial technical efficiency is invalid at sales stage, which is due to thescale in-efficiency. The pure technical efficiency of chain ‘Farmers-Agents-Fruit stores-Consumers’ is the highest.Finally, the following concrete measures were put forward: develop the cooperativesnormatively, advance the apple circulation channels, improve the farmers overall quality,provide rural public goods supply, etc.
