Recently, China is experiencing the crucial period of change in food consumptionpatterns. Food consumption structure is shifting from vegetal dominated to the animal andvegetal balanced. This paper systematically analyses the livestock products consumptionstructure of urban and rural residents in Northwestern China, trying to analyze the nutrientsintake related to the consumption of livestock products and to predict the potential of totalconsumption of livestock products in the future, and provides a theoretical basis for thedevelopment direction of livestock industry and policy suggestions of the government.The growth rate of livestock products consumption is rising with the growth of income.Since2000to2011, Urban residents’ poultry consumption increased mostly, almost doubled,followed by pork, milk, beef and mutton, eggs, consumption ratio of pork has a downwardtrend, but remained at more than50%. Rural residents’ livestock products consumption has anincreasing trend as a whole, where dairy consumption increased mostly, and the growth rate is175%, followed by beef, poultry, lamb, eggs, pork, consumption ratio of pork has declined,but remained at about70%.Livestock products consumption of urban and rural residents in Northwest Chinaincreased year by year from2000to2011, in which beef, mutton and milk increase faster,however, the gap between urban and rural areas, is still large, especially in dairy, beef andmutton consumption. Rural residents still consume pork most, however, the proportion of thepork consumption is gradually decreased, the proportion of the eggs consumption is relativelystable, and the proportion of milk, beef and mutton consumption has increased year by year.Factors affecting livestock products consumption include income, prices of livestockproducts, process of urbanization, development of the food industry, holidays, eating out andothers. Empirical research found that as incomes increase, beef consumption expenditures ofShanxi urban residents increase mostly, followed by milk, lamb, pork, poultry and eggs. Porkconsumption marginal propensity of Shaanxi rural residents is highest, followed by the eggs,milk, lamb, poultry, beef marginal consumption tendency is minimum.the paper tries to do some research about the changes in nutrients caused by the livestockproducts consumption, and compared with the recommended intake of nutrients, which foundthat the livestock products consumption of animal products of people in northwest region can not meet the nutritional needs, especially in rural areas, to meet the nutritional needs of ruralresidents, the livestock products consumption has big grown space.The paper analyzes the total demand potential of livestock products consumption in thenutritional constraints, structure and quality trends of livestock products consumption. At lastthe paper analyzes the constraints of livestock products consumption meeting the nutritionalneeds, including production constraints and household food expenditure constraints.
