Milk is the food with high nutrition, so it is very important to improve the dietary pattern and physical quality of residents in China. The dairy industry can invigorate the development in its relative industries, so it can not only make full advantages of solving the issues of agriculture, farmer and rural area, but also actively facilitate the development of the national economy. Dairy consumption is the terminal and the base of the whole dairy industry; so the study aiming on personal dairy consumption is a comparatively practicalAfter the year1978, dairy products changed from the exclusive product to ordinary goods. Per capita dairy consumption increased extraordinarily rapidly since the beginning of the new century. But the growth rate of per capita milk consumption of urban residents slowed sharply in recent years, even paced up and down. Meanwhile, the dairy plants didn’t do their best to develop consumer markets in rural areas. These became the bottleneck of China’s dairy industry nowadays. So it became urgent to increase the consumption of dairy products both urban and rural.After reviewing the consumption history and summarizing the recent characteristics of dairy consumption of urban and rural in China, the factors that effect dairy consumption were analyzed based on quantitative methods and qualitative methods. There also was a discussion about how the influence differed between urban and rural residents. Then according to the historical data of dairy consumption, some predictions were made statistically, including urban and rural consumption, quantity and expenditure.There were6chapters in this study, including four sections:The first part was chapter1, mainly including the problem of research, literature and theory review, and the purpose of the research.The second part included chapter2and chapter3, statistically summarizing the recent characteristics of dairy consumption of urban and rural in China, then the factors that effected their consumptions.The third part includes chapter4and chapter5, was the core of this paper. Dairy consumptions were predicted according to the historical data by predicting models.The fourth part was the conclusions of the study and the advice of the policy.The conclusions of the study:(1) The average level of dairy consumption of China was still below the world’s; urban residents were the main consumers of dairy products. Urban residents still consumed mainly on milk, as they were buying more yogurt than ever; rural residents consumed mainly on milk powder.(2) Private income was the main effecting factor for residents both urban and rural when buying dairy products.(3) In the year2020, the personal consumption of dairy products in urban areas would reach23.686kg, while in rural areas it would reach16.008kg. The disparity between rural and urban per capita consumptions would narrow.Due to the conclusions above, we propose some pieces of advice for government, the dairy industry and the dairy plants, including methods to increase per capita income, quality control of dairy product and marketing in dairy industry.
