The food industry is related to people’s livelihood, as a necessity of life of the people, community-wide are concerned about it. Along with the idea of supply chain management gradually applied to food industry, and the current condition of market economy, the competition among enterprises derivates become the competition between supply chains. The food industry supply chain management has aroused extensive attention from scholars. However, behind the China’s rapid economic development mode, Food safety problems are frequently caused by a series of major events, problems occur mainly in the upper reaches of the supply chain of food manufacturing enterprises, namely raw material suppliers and manufacturers. How to establish an effective mechanism to ensure food safety, and ensure that consumers can buy assured foods, it’s a big challenge to scholars and supply chain managers. As a result, research on food manufacturing enterprises in supply chain management has important theoretical significance and application valueIn order to solve this problem, on the basis of previous research, game theory, incentive mechanism, principal-agent theory and asymmetric information theory, are used to manage food manufacturing enterprises’supply chain. Specific research works are as follows:(1)This paper firstly describes research background, research purpose and significance, research ideas and main content.(2)It summarize this paper’s theory, specifically including research on supply chain and supply chain management’s definition, game theory and its main content, asymmetric information and incentive mechanism.(3)Analyze the current situation of our country’s supply chain of food manufacturing enterprises and the mechanism of food safety issues.(4)Game analysis on the upstream supply chain of food processing enterprises, specifically including complete information static game model, Complete information dynamic game model, under incomplete information and dynamic conditions of supplier and manufacturer’s bargain model.(5)Design an incentive mechanism based on principal-agent theory, motivate and constrain raw material suppliers, put forward a series of supply chain management strategies.(6)At the last of this paper, it summarizes the main findings and requiring work for further research.
