ISO 22000 is a management system which could be applied in enterprises on the whole chain of food processing for food safety. It can be used for improved food safety and prevention of food poisoning.History of ISO 22000 and catering service for the 29 th Beijing Olympic Games was briefly introduced at first. The study was mainly focused on the application of ISO 22000 on the supply of VIP buffet for the 29 th Beijing Olympic Games. Application and carrying-out of ISO22000 system, especially the facilities, raw material, description of concerned food, flowing charts of food preparation and processing steps, from 2007 to 2008 in one of coorperation companies of Beijing Olympic Organization Committee was described Based on related literatures and hazard analysis of each processing step, 11 critical control points, operation prerequisite plan for buffet preparation and transportation and application of cold chain on the whole chain of food preparation and transportation was determined. Working sheet of hazard analysis, HACCP plan, and monitoring and validationg systems for critical control points was all made out. All of these files were applied in the 29 th Beijing Olympic Games catering service of VIP buffet preparation, storage and preparation. Effectiveness of system was evaluated by tracing products on the whole chain.In the duration of the Beijing 2008 Olympic Games, all the products supplied by this company which applied ISO22000 system were safe. There was no complaim for food safety. At the same time, according to the feedback of VIP consumers and the results of microorganisms’ detection, the ISO 22000 management system could effectively guarantee the safety and sensory quality of Olympic VIP buffet, and it also made the materials and products traceable. This provided models and experience for food safety at large-scaled catering service.
