Compared to other food manufacturing companies,the products of flight catering companies are more diverse and more comp lex.Compared to the foods provided by fast food companies and hotels,flight foods are stored lo nger,transported through cold chain,heated twice and eaten in the air.Considering that flight foods are not only provided for passengers but also for the crew,the safet y of flight foods is also closely related to flight securit y.The construct io n of flight food manufacture qualit y and securit y control syst em has lo ng been the center of attent io n in flig ht catering industry.Food Safet y Syst em Cert ificat io n(aka FSSC 22000)is a glo bal and auditable food safet y management syst em,wit h specific prerequisite programs in t he industry,ISO 22000 and other addit io nal requirement s added into it.This research w ill study t he applicat io n of FSSC 22000 in flight catering industry and discuss how FSSC 22000 should be implemented in flight catering companies.The result s of this thesis are as follows:1.It discusses the origin,structure and range of FSSC 22000.Wit h complet e prerequisite programs,advanced addit io nal requirement s and a food supply chain t hat involves material,storage,product ion,transport and garbage disposal,it covers tradit io nal food safet y issues and current food safet y risks,and thus it is more suitable for the requirement of safet y from flight catering companies.2.It formulat es t he prerequisite programs and addit io nal requirements in FSSC 22000 for flight catering companies.By comparing GB 31641 and ISO/TS 22002-2:2013 and assessing different ial prerequisit e program terms,it determines the prerequisite programs for FSSC 22000.By establishing food protect ion procedures,ant i-food fraud procedures and allergen management procedures for flight catering companies,it implement s the addit io nal requirement s for FSSC 22000 for flight catering companies.3.It formulates qualit y control system files for FSSSC 22000 for flight catering companies,which correspond wit h those for ISO 22000.These files include core principle HACCP,food safet y goa ls,emergency preparat io n and response and trackabilit y system.4.Take catering depart ment,XIAMENAIR for example,after introducing FSSC 22000,t he complaint rate of passengers is declining in three years consecut ively.Management and Control of Allerge n,Plan of Protect ing the Food,Program o f Controlling and Prevent ing t he Food Fraud were added into the document,making t he mo nitoring system more comprehensive and proving that FSSC 22000 can fit and contribute to managing the food safet y of aerial cate ring industry.
