As a new type of healthy vegetables, okra is not only a kind of high nutritional value vegetables, but also a medical effect plants, and it is focused on food, medicine, plant flowers and feed.There has yet to see detailed report of flowers, seeds, seed coats part of nutrients and active ingredients. Okra as experimental material, this paper studies its flowers, seeds, seed coats of the nutrients and active ingredients for the development and utilization of okra and provide a scientif ic basis for quality control. The main r esearch content is as follows:The flavones of okra, polyphenols, polysaccharide and other active ingredients was used different methods to extract.It was concluded that flavonoids content was 1.42%, polyphenol content was 1.3%, polysaccharide was 1.2%.The before the column derivative HPLC method was used for determinating the type and content of amino acids in the seed.The results shows that the okra seeds contain 17 kinds of amino acid, total free amino acid content is 126.70 mg/g,including essential amino acids 42.16 mg/g, non-essential amino acids 84.53 mg/g.Okra seeds as experimental material, n-hexane as extraction solvent, ultrasonic assisted extraction method was used to extract the oil of okra seeds,and the gas chromatographic analyzed the kinds of fatty acids and the relative content, and assessed antioxidant capacity of fat ty acid by means of the ABTS+· radical scavenging test and DPPH radical scavenging test. Results showed that there were 13 kinds of fatty acids,and linoleic acid(42.05%), hexadecanoic acid(26.43%), oleic acid(20.58%), undecane acid(5.1%), stearic acid(3.4%), its peroxide value was 5.86 m mol/kg. In vitro antioxidant study, okra seed oil of DPPH radical scavenging capacity is equivalent to 0.5 mg/m L of VC removal ability, cleared to ABTS+·, ability is equivalent to 285 mg Trolox/m L removal ability.Using the before the column derivative HPLC method to analyze the type and coat of amino acids, the result showed that there are 15 kinds of amino acids, its total free content is 51.9 mg/g, and essential amino acids is about 18.48 mg/g, non-essential amino acids is about 33.47 mg/g, mainly about glutamic acid,aspartic acid, leucine,alanine mainly. Water solution and alcohol sedimentation extracted polysaccharides in pericarp of okra, and grade alcohol sink was 30%, 60%, 80%, and ion chromatographic analys is to test the composition and content of monosaccharide,results are based on three kinds of polysaccharide rhamnose, arabinose, galactose, glucose, mannose-based.DPPH radical scavenging test and FRAP method to evaluate three kinds of polysaccharide in vitro antioxidant capacity. Concluded that 80% of polysaccharide of DPPH free radical scavenging ability was strongest and when the concentration of the sample is 1000 mg/L,the clearance rate was 50%, 80% of polysaccharide’s ability to remove FRAP method was strongest.When the concentration of the sample is 1000μM, the clearance capacity equivalent to 273.326 μMFe3 + removal ability.
