Tea processing environment controlling is good or bad which determines the inferiors and superiors of tea processing quality. So, in this paper developing the discussion of simulation and optimization of Oolong tea manipulation environment based on CFD software, it is of great significance to intuitively know and predicte objective enviroment and change law of Oolong tea processing manipulation room, and improve the environment of tea processing and the working condition of workers,and improve and stable the quality of tea processing, and reduce energy consumption loss, and reconstructe old buildings, constructe new bulidings,providing a powerful scientific guiding and base.Through expatiation of counting principle and method on CFD,on the basis of above, the research on Taiwan-style and Minnan Oolong Tea air-condition Manipulation room, with the aid of Airpak software, the temperature, the relative humidity and the speed of the manipulation room were simulated and comparative analysis. The result of CFD simulation showed the temperature distribution in manipulation room presents the rule of temperature was increased from bottom to top; the relative humidity was decreased from bottom to top; Airflow organization distribution was different from the air inlet and outlet position of air-condition in manipulation room.In general,the temperature, the relative humidity and the speed of Taiwan-style manipulation room was uniform, so the design of the manipulation room was more reasonable; but the temperature, the relative humidity and the speed of Minnan Oolong Tea manipulation room was worse than that of Taiwan-style manipulation room.To validate CFD method feasibility,the test had system test for the eight-point different vertical plane and horizontal plane of airing green frames of environmental parameters of two kind of Oolong tea manipulation room, lastly by comparing analysis of experimental results with simulated ones, it was found that the whole trend of the temperature, the relative humidity and wind speed of measurement values and simulated one was consistent, and the temperature and wind speed have higher coincide degrees,which showed that simulation method of tea processing enviroment Airpak software is viability.The discussion on distribution differentiation of the variable points of fresh leave’s temperature, moisture content, dehydration rate, and biochemical changes of that, it was proved that the influence with tea leaves physiological changes uniformity by the temperature,relative humidity and speed of manipulation environment uniformity.For the problem of large mean age of air during Minnan Oolong Tea manipulation room, air-condition manipulation room was simulated and optimized by Airpak software, the optimization of the environmental index was analysed, the results presents that it improved the airflow organization of manipulation enviroment and decreased the mean age of air of manipulation room, after adding exhaust fan.
