But pleurotus eryngii water content is high, and the organization is very delicate, no obvious protection structure on surface of the bacteria, postharvest has active after ripening process largely influence the quality of it’s goods and it’s shelf life shortened, survey of pleurotus eryngii production and caused the constraints. This article through to the pleurotus eryngii fruiting body of controlled atmosphere packaging and combined with low temperature storage, to study it’s postharvest storage senses and physiological and biochemical changes during the study, in order to find the pleurotus eryngii controlled atmosphere packaging conditions of the optimal parameters. Main conclusions are as follows:1. Place the pleurotus eryngii after the precooling respectively in the temperature of 0℃,2℃,4℃,6℃,8℃, humidity for (90±5)% of the storage experiments in the freezer. senses of 5 kinds of samples, the features of physiological and biochemical indexes were studied. The results showed that the storage period 2 days, no difference between the weightlessness rate of each composition, as the extension of storage time difference of each composition after gradually obvious; Under the condition of the storage period of the 10th day 0℃ storage pleurotus eryngii weightlessness rate was significantly lower than other components.In the storage process, the experimental components of PPO activity and MDA content. soluble protein content were significantly increased. sensory score values and CAT activity dropped significantly. Each group of PPO activity throughout the storage period have significant differences, including 0℃ under the condition of the PPO activity of the lowest. In storage period sensory score values of components in 0-2 days difference was not significant, but the significant difference of components after the second day, where 0 ℃ under the condition of sensory score value is significantly higher than other components. Significant difference was found in CAT activity during storage of components,0℃ maximum and a minimum of 8℃. During the storage period 0℃ and 2℃ the content of MDA were significantly lower than that of other components, at 0℃ storage 4 days ago and no significant difference in 2℃ and 0℃ after 4 days of MDA content were significantly lower than 2 ℃ components. Throughout the storage period of each component of the soluble protein content showed a trend of rise and fall of the first, the overall upward trend, the difference of various components are very significant, among them the content of 8℃ lowest, highest 0℃. So the pleurotus eryngii at 0℃ condition will be better able to maintain its storage quality.2. After the pleurotus eryngii precooling respectively with HDPE, LDPE, EVA, OPP sealed packaging, to not the packing as a contrast, and combined with low temperature preservation storage experiments, senses, physiological and biochemical index of 5 kinds of samples were studied. The results showed that during the storage period, significantly higher than that of the experimental group and control group of weightlessness rate In the experimental group of HDPE weightlessness rate is the lowest, highest, EVA and HDPE in storage 10 days has significant difference with other components.In the storage process, the experimental components of PPO activity and MDA content, soluble protein content were significantly increased, sensory score values dropped significantly. The control of PPO activity was significantly higher than that of the experimental group, and each group of PPO activity in the whole storage period also have significant differences, where HDPE under the condition of PPO vigor lowest. Control group of sensory score significantly lower than that of the experimental group during the storage period, the experimental group in the storage period sensory score values of components in 0-2 days difference was not significant, but the significant difference of components after the second day, which adopts HDPE packaging pleurotus eryngii sensory score value is significantly higher than other components. Control the content of MDA in the storage period were significantly higher than that of the experimental group, no significant difference in the storage in experimental group 2 days ago, after the second day of HDPE packaging pleurotus eryngii MDA content were significantly lower than other components. Throughout the storage period of each component of the soluble protein content showed a trend of rise and fall of the first, the overall upward trend, the difference of each component are more significant, the pleurotus eryngii of LDPE packaging content is the lowest, highest of HDPE. Therefore used as experiment 4 packing material, HDPE for the best effect of preservation of pleurotus eryngii.(3) of the storage temperature, concentration of O2, CO2 concentration of three factors affecting pleurotus eryngii controlled atmosphere packaging condition has carried on the single factor experiment, with sensory score as the evaluation index, the results to get the best storage temperature 0 ℃, the best concentration of O2 is 2%, the best CO2 concentration was 6%. Determined by orthogonal test L9, pleurotus eryngi optimum parameters of controlled atmosphere packaging conditions:temperature 0 ℃, O2 concentration is 2% and CO2 concentration is 6%. According to the optimal process conditions for validation test, under the condition of the dry beef sensory score of 98.55 points.
