This paper mainly studied the optimum packaging technique of pleurotus eryngii under different temperature conditions.By selecting different thickness PE preservative film and microporous film of different parameters to regulate the gas concentration(oxygen and carbon dioxide)in the bag.The effects of different packaging on the quality of Pleurotus eryngii were evaluated from the aspects of nutrient(VC,soluble protein,free amino acid),ethanol content and sensory quality.The mechanism of different packaging on the quality of Pleurotus eryngii was analyzed from the electric conductivity and malondialdehyde content,finally determine the suitable packaging method of Pleurotus eryngii at room terperature shelves and low temperature storage.Choosing different thickness(20?30?40?50?m)of PE film to make fresh bags for packaging Pleurotus eryngii,carry out the shelf experiment at room tenperature,the results showed that oxygen concentration in each packet drops rapidly to near zero after 1 day,and is maintained at a level close to zero;Carbon dioxide rose to the highest after 3 days,then gradually decreased,and the greater the film thickness,the higher the concentration of carbon dioxide in the bag.The peak concentration of carbon dioxide in the bags of 50?m thickness was 56.3%.Hypoxia and high carbon dioxide content effectively inhibit the respiratory strength of Pleurotus eryngii and delay its aging.During the first 9 days of storage,the contents of nutrients(VC,soluble protein and free amino acid)of Pleurotus eryngii in 50m? PE bags were significantly higher than those in other thickness groups;the integrity of the cell membrane structure was superior to that of other thickness groups.Ethanol content was significantly higher than other thickness groups(up to 12.6mg/g),and its preservation effect is the best.However,in the late storage period(12 days later),Pleurotus eryngii was exosed to low O2 arnd high CO2 concentration environment,and its cell membrane structure was obviously damaged,which caused the softening and collapse of Pleurotus eryngii surface.So at room temperature storage period of no more than 9 days,50?m thickness of the plastic bags can provide the best preservation effect for Pleurotus eryngii.Choosing 50 ?m thick microporous film(the number of micro pores are 0?3?6?9?12 and 15)to make fresh bags for packaging Pleurotus eryngii,carry out the shelf experiment at room temperature,the results showed that oxygen concentration in each bag is also rapidly decreased to near zero after 1 day,and it is maintained at a level close to zero.Carbon dioxide rose to the highest after 4 days,then gradually decreased,and the more the number of holes,the lower the concentration of carbon dioxide in the bag.The peak concentration of carbon dioxide in the bag was 49.5%in the control group(OK).During the first 9 days of storage,OK packaging of Pleurotus eryngii maintain a high nutrient content,and with the increase of the micro pores,nutritious substances contained in Pleurotus eryngii of microporous plastic wrap show a decreasing trend and the cell membrane structure damage increased,the quality gradually decreased.Contrast preservation effect was significantly better than microporous packaging.Choosing different thickness(20?30?40?50?m)of PE film to make fresh bags for packaging Pleurotus eryngii,carry out the shelf exqperiment at 0?,the results showed that oxygen concentration in each packet drops rapidly to near zero after 3 days,and is maintained at a level close to zero;Carbon dioxide rose to the highest after 5 days,and the greater the film thickness,the higher the concentration of carbon dioxide in the bag,but were significantly lower than the same film thickness at room temperature.The peak concentration of carbon dioxide in the bags of 50 ?m thickness was 12.9%.At low temperature,50?m thick PE cling film packaging effectively slowed down the respiration and physiological metabolism of Pleurotus eryngii,and the contents of the nutrients were the best.The cell membrane structure had better integrity and the highest ethanol content(4.06mg/g,but significantly lower than the 50?m thickness PE cling film packaging at normal temperature).So 50?m thickness of the plastic bags can provide the best preservation effect for Pleurotus eryngii,which still have good quality in the storage 50 days.Choosing 50 ?m thick microporous film(the number of micro pores are 0?2?4?6?9?and 12)to make fresh bags for packaging Pleurotus eryngii,carry out the shelf experiment at 0°C,the results showed that oxygen concentration in each bag is also rapidly decreased to near zero after 4 days,and then gradually recovered and equilibrium.The contents of carbon dioxide in each bag rose to the highest in the first 10 days,then slowly decreased and gradually reached equilibrium,and the more the number of holes,the higher oxygen concentration and the lower concentration of carbon dioxide in the bag.At the time of balance,the oxygen content in the bag of the control group(OK)was close to zero and the carbon dioxide content was about 17%,the oxygen content of 12K packaging was about 14%and carbon dioxide content was about 7.5%.With the increase of the micro pores,the content of nutrients contained in Pleurotus eryngii was decreased gradually,the damage degree of cell membrane structure gradually increased,and the quality of Pleurotus eryngii decreased gradually.So the quality of OK packaging Pleurotus eryngii was best,which maintain a high nutrient content at 50 days of storage.
