Sweet cherries are rich in phenols,organic acids,sugars,volatile compounds and other active ingredients,which have effects of anti-cancer,anti-inflammatory,immune-enhancing and anti-neuronal.However,there is a lack of consistent and complete methods to determine the multivariate relationship between chemical composition,sensory and health characteristics of sweet cherry varieties,and it is difficult to evaluate the quality and suitability of sweet cherry varieties.Therefore,the quality identification and screening of sweet cherry varieties are of great significance.This paper took 24 sweet cherry varieties with a wide planting area in Tai'an City,Shandong Province as the material,and its main traits(total sugar,reducing sugar,sugaracid ratio,titratable acid,juice yield,edible rate,anthocyanin,vitamin C,pH value,firmness,single fruit weight)were analyzed by principal component analysis and fuzzy evaluation in order to select high-quality varieties of sweet cherry.The specific recognition pattern of sweet cherry varieties were established by non-targeted methods to obtain the corresponding metabolomics fingerprints of all coexisting chemical components.The major findings of this paper were as follows:1.Study on fruit quality characteristics of 24 sweet cherry varieties.By comparing the physicochemical indexes of different sweet cherry varieties,five main factors were extracted,including taste,sweetness,quality,edible and antioxidant.Nine kinds of cherry varieties were preliminarily determined by factor score sorting and fuzzy comprehensive evaluation,among which the best variety was Red,so it can be opted as cherry resources development and utilization,quality improvement and breeding materials.2.According to the results of the questionnaire,12 representative cherry varieties were selected for fingerprint analysis.The results showed that twelve kinds of sweet cherries are rich in organic acids,hydroxycinnamic acid,hydroxybenzoic acid,anthocyanins,flavanols and other flavonoids.Cherry varieties were grouped according to different variables.Three groups were based on phenolic variables and four groups were based on organic acid variables.Malic acid,anthocyanin-3-o-rutin,p-coumaryl quinine,neochlorogenic acid and rutin are the characteristic compounds of cherries.3.According to the study of cherry fingerprints,the anthocyanin and flavonol patterns can be used for the classification of cherry varieties,and the anthocyanin 3-o-rutin can be used as a preliminary indicator for the grouping.The results of PCA,CA and SA indicated that the variety of cherry HPLC fingerprint was dependent.The optimized sample preparation and analysis method represents a non-targeted and practical method with considerable sensitivity,precision,stability and repeatability for the comprehensive evaluation of quality of sweet cherry and for the preliminary identification of individuals in cherry varieties.
