Researches On Carcass And Meat Quality Of Tibetan Pigs

To fully understand Tibetan pigs from Gongbujiangda "National genetic resources reserve of Tibetan pigs " hidden carcass and meat quality characteristics which were from the Cuogao village, Bahe town and Zhula village three Tibetan pig populations, each population sample 6, weight when sampling slaughter up to about 25 kg, take M.longissimus dorsi and serum determination of all of the following meat quality traits and some blood parameters used.The main result of the measurement show that:1. Tibet pig from the town of Cuogao, Bahe and Zhula hidden in body length, body height, bust, the number of thoracic and lumbar spine number were not significantly different(P> 0.05). Carcass performance of live weight before slaughter, left carcass weight, carcass weight, ham weight, skin thickness on the 6-7 rib and lean meat weight of Tibetan pig in Cuogao village were significantly higher than the Zhula village(P <0.05). Township Tibetan pig in the town of Cuogao and Bahe which slaughter rate difference was not significant(P> 0.05), and were significantly higher than the Zhula village Tibetan pig(P <0.05). Bahe town and Zhula village Tibetan pig were no significant difference(P> 0.05) on the muscle area of eye shapes and significantly lower than Cuogao Tibetan pig(P <0.05).2. Three Tibetan pig populations in meat color, marble shaped pattern, the rate of water loss, cooking loss, drip loss, tenderness, dry matter content, intramuscular fat content, crude protein and crude ash content were not significantly different(P> 0.05). Meat quality characteristics of Bahe town and Zhula village Tibetan pig in the p H1 and p H24 was no significant difference(P> 0.05) and were significantly lower than Cuogao Tibetan pig(P <0.05). Napole yield of Bahe town Tibetan pig was not significantly different of wrong and Zhula village Tibetan pigs(P> 0.05), in which the Cuogao and Zhula village Tibetan pigs were significantly different(P <0.05).3. Cuogao and Zhula village Tibetan pigs in the insoluble collagen content, soluble collagen content and total collagen levels were not significantly different(P> 0.05) and were significantly lower than the Bahe town Tibetan pig( P <0.05). The cholesterol levels of Tibetan pigs in the town of Cuogao and Bahe were not significantly different(P> 0.05), and were significantly higher than the Zhula village Tibetan pig(P <0.05). The results compared with foreign Pigs data, the total collagen is higher and the total cholesterol is lower of population of the three Tibetan pigs.4. Three Tibetan pig populations in the total blood SOD activity, MDA concentration and T-AOC were not significantly different(P> 0.05). Three groups of Tibetan pigs muscle stored at 0-4 ℃ under six days that the total SOD activity, MDA concentration and T-AOC were not significantly different(P> 0.05). The SOD activities of three Tibetan pig populations were 42.93%, 41.36% and 43.01% higher than the foreign Pigs, MDA contents were 15.79%,10.51% and 21.05% lower than foreign fattening pigs.Therefore, Gongbujiangda Tibetan pigs muscle has good resistance to oxidation, which may be related to local high altitude environments,and needs further study.5. Tibetan pigs in the town of Cuogao and Bahe on AST, ALP and LDH levels were not significantly different(P> 0.05) and were significantly lower than Zhula village Tibet pig(P <0.05). Tibetan pigs in the town of Cuogao and Bahe in the TP and GLU levels were not significantly different(P> 0.05), and were significantly higher than the Zhula village Tibetan pig(P <0.05). Tibetan pigs in the town of Zhula and Baheon the CK were not significantly different(P> 0.05), and were significantly higher than Cuogao village Tibetan pig(P <0.05). The results of the study showed that total cholesterol of Gongbujiangda Tibetan pigs blood biochemical indicators is low, the rest of the blood biochemical parameters were within reasonable limits, lower total cholesterol may be related to the pig activity volume.6. The total unsaturated fatty acid content of Tibetan pigs in the town of Cuogao and Zhula was not significantly different(P> 0.05) and significantly higher than the Bahe town Tibetan pig(P <0.05). The total rural polyunsaturated fatty acid content of Tibetan pigs in the town of Bahe and Zhula was not significantly different(P> 0.05) and significantly higher than the Cuogao village Tibetan pig(P <0.05); Tibetan pigs in the town of Bahe and Zhula on EPA and DHA content was not significantly different(P> 0.05) and significantly higher than the Cuogao village Tibetan pig(P <0.05). The DHA, EPA, and total polyunsaturated fatty acid contents of three groups of Tibetan pig were higher than foreign fattening pigs, and the total polyunsaturated fatty acid contents were more than Laiwu pigs and Duroc pigs.7. Three Tibetan pig populations in Asp, Thr, Ser, Glu, Gly, Ala, Val, Met, Lle, Leu Tyr, Phe, Lys, His, Arg and Pro content were not significantly different(P> 0.05). The cysteine content between Cuogao and Zhula village Tibetan pigs was not significant(P> 0.05) and significantly higher than the Bahe town Tibetan pig(P <0.05). Three Tibetan pig populations in delicious amino acids(DAA) content, essential amino acids(EAA) and total amino acid(TAA)content were not significantly different(P> 0.05). but in the delicious amino acids(DAA) content,essential amino acids(EAA) and total amino acid content(TAA) are Zhula village Tibet pig> Bahe town Tibetan pig> Cuogao village Tibet pig. Three groups of Tibetan pigs have high amino acid contents, which the delicious amino acids of the Tibetan pigs of Bahe town and Zhula village was 1% and 5% higher than foreign fattening pigs data, so from the flavor amino acid content point of view, the quality of Tibetan pig meat is more delicious than foreign fattening pigsThe results of the study showed that Gongbujiangda Tibetan piga meat has excellent characteristics, including muscle chemical composition, nutrients, amino acids, fatty acids, inosinic acid and other rich content, is a very good local pig breeds.
