Kidney bean is a herbaceous annual leguminous plant, with consumption of grain is given priority to, in our country wide distribution range, north, south, east, and west have grown.They like the terrain, climate, cold place.Although kidney bean is minor legume crops, has the certain export advantage, and export more and more, showed a trend of increase year by year.At the same time, the kidney bean seeds are rich in nutrition, is high in protein, fat content is low, can well meet the demand of modern people’s health.Therefore, research on the adaptability of different varieties of kidney bean in different ecological conditions, productivity, and the varieties of different p Hysical and chemical features of kidney bean protein component, variety breeding and promotion of kidney bean, high-yield cultivation, utilization and food processing has certain guiding significance.This study in recent years around the breeding of 8 varieties(or lines) which is Fu Hongyun 1, Zhang Yun 1, Long 23-0846, Datong yellow kidney beans, Canadian red kidney beans, YD10-05, Long 26-212 and YD09-2 as materials, such as kidney bean varieties was analyzed systematically different growth characteristics in Yulin Shaanxi region and its performance in the national kidney bean grain production, and is contrast with soybeans, determination of 8 varieties of soluble protein components of kidney bean(albumin, globulin, gliadin and glutelin) content and molecular weight distribution and its features of albumin, including solubility, foaming ability and foam stability, emulsification and emulsion stability.The main conclusions are as follows:1. The variance analysis results indicate that the kidney bean yield differences among testing varieties of extremely significant level, Long 23-0846 and YD09-2’s yield performance is good, the average yield of 15 sites in kidney bean grain were 2102.6 kg/hm2, 2079.7 kg/hm2, and have to do well in most of the sites and to explain the high yielding and good adaptability.Kidney bean yield differences between various sites also reached significant level, to explain different sites due to the ecological environment and soil fertility of different lead to kidney bean production level, with an average yield of testing varieties in various sites, guizhou weining, urumqi, xinjiang, heilongjiang jiamusi sites such as kidney bean production level is higher, volunteers kidney bean average yield were 2807.6 kg/hm2, 2663.3 kg/hm2, 2611.3 kg/hm2.Different varieties of kidney bean field growing and showed different agronomic traits.By planting in shaanxi yulin sites survey, the results show that the high yield varieties Long 23-0846 and YD09-2 is a dragon in ripe varieties, erect, main stem branch number and a relatively small number of main stem section, reasonable distribution, and long grain large pods;And low yielding varieties Canada red kidney beans growth period is long, some late pod is not fully mature, and internodes length, pod short grain.2. Different varieties of kidney bean protein different components. The same kidney bean varieties of albumin, globulin, gliadin and glutelin in the proportion of total protein in the is not the same.Traple 8 varieties, crude protein content is between 23.10% and 26.38%, albumin, globulin, gliadin and glutelin four soluble protein accounts for the proportion of total protein in the order: 39.276% to 45.187%, 1.474% to 4.408%, 0.062% to 0.313%, 1.397% to 5.260%.Gluten containing high levels of methionine and cystine, and kidney beans in relatively high gluten content in soybeans and other egumes.Between different varieties of kidney bean protein subunits and varieties with different molecular weight protein components mainly focused on the molecular weight of 33 ku, 47 near ku, but there are still differences between varieties, showed that different varieties of kidney bean albumin, globulin and glutelin exist certain differences in composition.3. The features of different varieties of kidney bean albumin has certain difference.Kidney bean albumin solubility is slightly lower than soybean protein, kidney bean albumin solubility in isoelectric point near minimum, under the condition of the above or below the isoelectric point, YD10-05 and Canadian red kidney beans did well clear protein solubility of red kidney beans, and rich red non-success clear protein solubility of no. 1 is the worst.The foaming ability and foam stability of kidney bean albumin higher than soybean protein, under neutral conditions, different varieties of kidney bean albumin, YD10-05 albumin foaming ability and foam stability is poor, and Canadian red kidney beans albumin foaming ability and foam stability.Kidney bean albumin emulsification is higher than the emulsification of soybean protein qing, but the emulsification stability of soybean protein albumin and kidney bean there was no significant difference.Under neutral condition, Long 23-0846 and YD09-2 albumin emulsification is low, while Canada red kidney beans albumin emulsification supreme;Zhang yun albumin emulsification stability of no. 1 is highest, and datong yellow kidney bean albumin emulsification stability of the lowest.Comprehensive analysis shows that the test can identify more varieties for many years to adapt to the range and flexibility, high yielding, therefore, around the kidney bean production according to the ecological environmental conditions and climate characteristics of breeding and promotion of suitable varieties, realize the variety of regional layout, to play a variety of production potential.Due to different varieties of kidney bean grain protein content and composition and its features are different, in the kidney bean functional food development and processing according to the need to choose the suitable varieties for the raw material, scientific research units to also want to meet the needs of market and the machining special varieties breeding and promotion.
