Objective: Determine the contents of active ingredients and nutritional ingredients ofHypsizygus marmoreus, and compared with other fungus. To provide experimental data forthe development of Hypsizygus marmoreus utility and establishment of Hypsizygusmarmoreus quality standard.Methods: With reference to Chinese Pharmacopoeia and related literature, thenutritional ingredient (such as moisture, sulfated ash, trace elements, protein, crude fiber,amino acid, vitamins, fat, etc) and active ingredients (such as total flavonoids, total phenols,saponins, cholines, polysaccharides, etc) were determined.Results: Hypsizygus marmoreus contains more moisture except stipe base, and lesscrude fiber. The content of sulphated ash is much more. The trace element of Hypsizygusmarmoreus is rich, Fe, Cu, Ni, Mn is prominent among them. The stipe base contains moretrace elements than the fruiting body, especially the content of Fe. The same content ofcrude protein is in the stipe base as fruiting body of Hypsizygus marmoreus, and the resultis23.18%and21.98%respectively. The fat content of Hypsizygus marmoreus is no moredifferent from other fungus. Content of VA, VB1,VB2,VB6,VC and VE is medium level.Folic acid is rich and nicotinic acid is scarce. Hypsizygus marmoreus has more content oftotal amino acids, essential amino acids and flavor amino acids than other fungus. Stipebase of Hypsizygus marmoreus contains more flammulina and pleurotus eryngii. The totalphenolic content of Hypsizygus marmoreus was1.468mg/g, just medium level.Hypsizygus marmoreus contains much more choline than other fungus. Stipe base ofHypsizygus marmoreus contains more saponins and polysaccharides, the contents are9.954mg/g and62.13mg/g respectively. Conclusions: Hypsizygus marmoreus contains more nutritional and active ingredients.Its content level of essential amino acids and flavor amino acid is higher than other fongus.It has rich trace elements. In summary,It maybe has high value for reducing blood lipids,enhancing immunity and memory, against tumor, etc. At the same time, according to theexperiment data, the stipe base which is used to be considered as waste, contains muchmore flavonoids, choline, saponin and polysaccharides, also has high value for developingmedical utilities.
