Enterococcus faecalis (E.faecalis) also known as fecal streptococci,usually lived inintestinal cavity of animals,and a probiotics for humankind that habitual residence at upperrespiratory tract or intestinal of human body.As one of the Enterococcus Lactic class,Enterococcus faecalis is the native stains of animals’ intestinal tract with very goodbio-security and excellent probiotic properties.Because many factors affect the viability ofprobiotic bacteria,such as temperature,humidity,pH,mechanical forces,and so on,which had resulted in easy inactivate of probiotics and reduce their effectiveness.Embedding technique of microencapsulation is widely used in food,medicines,fodder andother fields.By embedding probiotics effectively,it enhances its resistence to unhealthyenvironmental factors such as high temperature,evaporation and gastric acid and bile,while it lowers its effect by mechanical force,provides a better micro-environments forcell survival. With probiotic bacteria and the accumulation harm to humankind byantibiotics been used to add in animal feed getting more and more attention, manyscholars began the research on developing probiotic fodder,and recommended green,safefodder additive. The dissertation deals with how to settle the problems of probioticsinactivation in adverse environment by studying the resistance of Enterococcus faecalis,tosolve some of their problems through the embedding of microencapsule.The researchcontents and results of the research are as follows:1.The stress resistance of E.faecalis is weak.It cannot live in pH1.5artificial gastricjuice,and significant decrease in viable count in pH2.5artificial gastric juice after2.5h.At70℃,no bacterium can survive after1min treatment.E.faecalis stored at normaltemperature,it’s easy to die,its viable count would decrease2orders of magntiude after15days,and4orders of magntiude after60days.2.Through the biocompatibility and wall material selection test,the material ofcomposite wall can be made from Arabic gum and maltodextrin.The2%of wall canpromote the growth of Enterococcus faecalis better,with the viable rate of62%,so that itis better than the other compositewall material by60.3%,58.1%,56.3%.3.In experiment of spray drying embedding microcapsules process,the best result is:inlet air temperature is140℃,feeding flux is13.5ml/min,Arabic gum:malt dextrin is1:8,wall material concentration is20%, as a result, viable count of E.faecalis reach4.0×109cfu/g,embedding rate is70%,embedding yield is40%,The product have better acid proof,humidity and storage time than unembedding ones through follow-up tests.4.E.faecalis microencapsulation can be used in feeding white feather broiler,29-42ddaily gain surpassed the international products,more than the basal diet and the productswhich are not embedded.That meant the embedding products have a potential role inpromoting the daily gain of white chicken,improving the intestinal environment andenhancing the ability of preventing diseases....
