The quality and safety of water bamboo cultivated in Zhejiang was studied in this paper. After detecting and validating the water bamboo with potential quality and safety risk, combined with the survey results, heavy metal absorption and accumulation experiments and dietary exposure risk assessment, the technical regulations for producing water bamboo were proposed. The results were as follows:1. The main risk factors to the quality and safety of water bamboo were including heavy metals in producing environmental, the pesticides residue and the post-harvest preservation agent residue.2. The quality and safety risk assessment in this experiment showed that heavy metals (Gt、Ni、Hg、Cd、Pb), sulfur dioxide and chlormequat chloride were existed in water bamboo with a high detection rate.3. The accumulation content of heavy metals in water bamboo products had a positive correlation to its content in soil. And the area with a Hg exceeded soil should strengthen the monitoring to ensure its food safety. The dietary exposure risks for sulfur dioxide and chlormequat chloride were evaluated and the corresponding risk quotients (RQs) were both lower than10%. These results showed that the quality of water bamboo was within the safety levels, but the chlormequat chloride to children deserved more attention.4. Environmental quality of water bamboo before production should strengthen monitoring; The scientific applications of physical, biological and chemical control should be taken to prevent the diseases, insect pests and weeds during production; and the water bamboo should sale in time after production. Water bamboo production need carefully pay attention on the snails harm, and comprehensive prevention and control measures could be taken when necessary.
