Perillafrutescens L. Britt belongs to the labiate perilla plant, and it has very high medicinal and nutritional value, which is the traditional medicine and food dual purpose crop. Its nutrients mainly include flavonoids, protein, polysaccharide, polyphenols and unsaturated fatty acids, in particular, it is rich in a-linolenic acid. Sprouts are called "living vegetables", which is the green vegetables have a high nutritional value.The study on the accumulational nutrients in the process of Perilla frutescens sprouts germination were studied to provide a theoretical basis for the development of Perilla frutescens sprouts. The results were as follows:During Perilla frutescens sprouts germination, the accumulation of nutrients along with the shoot length changes, and there were no significant changes of total flavonoids when shoot length reach 2 cm,3 cm,4 cm and 5 cm; the total protein content was the highest at 5 cm, the output of total protein was no significant changes at 3 cm,4 cm and 5 cm; the content of polysaccharide was significant differences compared with the control at 4 cm and 5 cm, and the output was highest at 4 cm; the content of polyphenols had no significant changes at 2 cm,3 cm,4 cm and 5 cm, and the output was not significantly changed at 2 cm,3 cm and 4 cm; there was no significant difference of a-linolenic acid content compared to the control except for 3 cm and 5 cm, and the output of a-linolenic acid had no significant changes when shoot length reach 0.1 cm,2 cm,3 cm and 4 cm; comprehensive analysis, during Perilla frutescens sprouts germination the highest nutrients was appeared at the period when shoot length reach 4 cm.This study cloned the key enzyme gene of a-linolenic acid of Perillafrutescens, fatty acid desaturase (FAD) gene, and the result showed that the transcriptional expression of FAD gene is closely related to the content of a-linolenic acid.
