Four varieties watermelon fruit of edible seed watermelon flavor, ‘Tianzi-1’, ‘Shuangyue’,‘Xizi-1’, ‘Linzi-3’,and a flesh watermelon variety ‘Xinong-8’were used to compare and find the differences of quality, physiology in storage at room temperature. The results showed as follow:1. The peel thickness of ‘Tianzi-1’, ‘Shuangyue’,‘Xizi-1’, ‘Linzi-3’ decreased 33.6%,44.2%, 31.3%, 39.2%, the peel firmness dropped from 12.08,11.67,11.27,11.85 kg/cm2 to 6.78,6.33,5.60,6.65 kg/cm2,the weight of fruits decreased 3.1%,3.5%, 3.8%, 2.8% after storage 70 d. And the cell membrane permeate rate of ‘Shuangyue’ rose to 83%, flesh degenerated into a watery and lost edible value.2. The results indicated that changes of peel and pulp moisture content between different watermelon fruit of edible seed watermelon flavor during room temperature storage are unobvious. Compared with the ’Xinong-8’, changes of soluble solid content of core between different watermelon fruit of edible seed watermelon flavor during the same storage time are unobvious.3. Compared with the ’Xinong-8’, changes of PG activity of watermelon fruit of edible seed watermelon flavor was unobvious. The PG activity of‘Tianzi-1’and‘Linzi-3’was ascend in the late. But the PG activity of ‘Xinong-8’changed very obvious, the activities of PG fell down in frontal period,and ascend in the back,then became fall down. Watermelon fruit of edible seed watermelon flavor and ‘ Xinong-8 ’ was different in changes of SOD activity watermelon fruit of edible seed watermelon flavor ’s SOD activity was always ascend during storage, while‘Xinong-8’fell down. The change of the activities of POD took on bimodal, both watermelon fruit of edible seed watermelon flavor and ‘Xinong-8’.4. Microstructure of tissue and cell in fruit skin of cultivars shows:The fruit of bearing-storage and bearing-transportation cultivates had thick cuticle in fruit epidermal cell,more cell layer in exocarp, bigger groups of stone cell,smaller and denser cell in monocarp.5. The storability of watermelon fruit of edible seed watermelon flavor is better than fresh watermelon. And there are different in storage characteristics among different varieties of edible seed watermelon flavor. The ‘Tianzi-1’is the best, followed by ‘Xizi-1’, and the ‘Shuangyue’ and ‘Linzi-3’ are worse in storage and transportation.
