People more like consume high quality pork with the develpoment of society and improvement of people’s living standard. Shaziling pig, the well native breed of Hunan province and precious genetic resources, is one of best varieties-female breed in the production of lean meat pigs in Hunan, which plays a cucial role in the porcine production in Xiangtan and the whole province. This study use the Duroc as the advantageous, Hampshire ×Shaziling pig and Berkshire ×Shaziling pig as the female parent for reseach the difference of growth performance, carcass perfomance and meat qualities between this three pig breeds.The average day gain of Shaziling pig, Duroc ×Hampshire ×Shaziling pig, Duroc ×Berkshire ×Shaziling pig are 511 g,730g,826g, repectively, The average day gain of Duroc X Hampshire X Shaziling pig and Duroc X Berkshire X Shaziling pig increased by 61.84%×(P<0.01),42.86%(P<0.01) as compared with Shaziling pig, as well as Duroc ×Berkshire×Shaziling pig has more average day gain(13.29%) than Duroc X Hampshire X Shaziling pig. The feed/gain of three breeds are 3.93:1,3.48:1,3.11:1, and Duroc×Berkshire×Shaziling pig decreaed by 20.86%(P< 0.05),10.63% (P<0.05) as copared with Shaziling pig and Duroc×Hampshire× Shaziling pig, repectively.All index of carcass perfomance have a difference between three breeds besides dressing percentage. The slant length and straight length of carcass, hind leg ratio, longissimus muscle area of Duroc×Berkshire×Shaziling pig and Duroc× Hampshire×Shaziling pig is more than Shaziling pig, and the average thickness of three diffent point of fat and shin are less than Shaziling pig, but all of this index are no difference between Duroc×Berkshire×Shaziling pig and Duroc×Hampshire× Shaziling pig. The lean rate of Shaziling pig, Duroc X Hampshire X Shaziling pig, Duroc×Berkshire×Shaziling pig are 38.92%,55.86%,57.03%, repectively, The lean rate of Duroc×Hampshire×Shaziling pig and Duroc×Berkshire×Shaziling pig is much more than Shaziling pig. And there is no difference between Duroc X Hampshire X Shaziling pig and Duroc X Berkshire X Shaziling pig.There are no difference in marble lines, color scroe, tenderness, pH1 value, PH24 value, storage loss, filtration rate between different breeds, when the cooking loss of Duroc×Hampshire×Shaziling pig and Duroc X Berkshire X Shaziling pig is much more than Shaziling pig.Almost all of 17 amino acids rate in longissimus muscle are different between three pig breeds, and Duroc X Hampshire X Shaziling pig’s is least, as well as Shaziling pig and Duroc×Berkshire×Shaziling pig are much more than Duroc× Hampshire×Shaziling pig. In adition, the total amino acid, delicious amino acid, essential amino acid of longissimus muscle of Shaziling pig are the highest, and Shaziling pig and Duroc×Berkshire×Shaziling pig are much more than Duroc× Hampshire×Shaziling pig, but there is no difference between Shaziling pig and Duroc×Berkshire×Shaziling pig. There is no difference in palmitic acid methyl ester, eicosanoic acid methyl ester, methyl cis-11-eicosenoate and total fatty acid between three pig breeds, while the methyl myristate, methyl palmitoleate, methyl linoleate and aturated fatty acid of longissimus muscle of Duroc×Hampshire×Shaziling pig and Shaziling pig are much more than Duroc×Berkshire×Shaziling pig. The content of K, Na, Cu, Mg in longissimus muscle have no diffrence in different pig breeds. The content of Ca of Shaziling pig, Duroc × Hampshire ×Shaziling pig, Duroc ×Berkshire X Shaziling pig are 36.5 ug/g,32.23 ug/g,27.18 ug/g. As and F are not checked in three pig breeds, as well as the content of Pb is limited in the safe dose.From above results, Duroc ×Berkshire ×Shaziling pig don’t reduce the meat quality of Shaziling pig but can decrease finishing performance and carcass performance. We recommend the Duroc ×Berkshire ×Shaziling combination be used in practice.
