To explore the influence of different measures on color and aroma quality of peach fruit,and to provide theoretical basis for pratical production.The Shaanxi planted ‘Ruiguang No. 19’ nectarine(Prunus persica var. nectarina) and‘Abubai’peach(Prunus persica L.) were used as experiment materials.Taking measures of bagging, spreading reflective film and spraying growth regulators, using ultraviolet spectrophotometer and solid phase microextraction-gas chromatography-mass spectrometry(SPME-GC-MS), we analyzed the change of aberration and cyanine in peach pericarp, we analyzed the change of aroma composition and content in peach sarcocarp. The results can be described as follows:1. The red saturation of pericarp was improved significantly by bagging technology. In this experiment, the paper bags were better than non-woven bag and plastic bags in Shaanxi province. For ‘Ruiguang No.19’nectarine, its weight was reduced but the hardness and aroma substances increased. The double yellow outside with red inside paper bag for comprehensive quality of fruit was best. In addition, the double yellow outside with red inside paper bag was tested on May 14 th, 19 th and 24 th. The results showed that bagging time the sooner the better coloring, and the smaller bad influrnce of internal quality. Therefore bagging on May 14 th was reasonable time for ‘Ruiguang No.19’nectarine. Different bags for‘Abubai’increased the weight, but decreased the content of aroma. Among these different bags, the single yellow with internal balck paper bags for fruit quality was best. And using it bagging on June 4th, 9th and 14 th were tested. It was concluded that the color quality of bagging on Jun 9th was best, the soluble solids were reduced and aroma quality declining as the bagging time delay. So on June 4th, the comprehensive quality of ‘Abubai’ peach was better.2. Spread reflective film increased the red saturation of ‘Abubai’peach pericarp significantly, and make the appearance red saturation a* increase 18.04 than control, and increase 10.29 than bagging. Therefore, we suggest for ‘Abubai’peach cultivation using the bagging and reflective film supporting technology in Shaanxi area.3. Three kinds of grow regulators which were abscisic, ethylene and paclobutrazol were used for ‘Abubai’peach.Among them, the ethylene and paclobutrazol significantly improved the red appearance of fruit. At the same, the content of soluble solids and aroma were also improved. And the aroma content of spraying abscisic was most. From the comprehensive quality, the effect of spraying paclobutrazol for ‘Abubai’ trees was best, and the ethylene second.
