The characteristics of agricultural material are diversity and complexity,making it difficulty for the study of agricultural materials,also making the versatility of drying equipment low.In order to solve this problem,this study based on the biological characteristics of the material,having a class of certain commonality of crops were selectaed to research hot-air drying,aim to come up with classify ideology.This study chose tuber and root crops.Select four kinds of crops,sweet potato,potato,yam and taro,to study their hot-air drying characteristics.Hot air temperature (55℃,70℃,85℃), slice thickness (3 mm,5 mm,7 mm), method of cutting (transverse, longitudinal cutting),this 3 factors were chosed during hot-air drying and single factor experiment was carried out for four kinds of materials. Drawing drying curves for four kinds of material on the index of moisture content. Orthogonal test analysis was carried out on the experimental data,in order to explore the three factors of primary and secondary order and optimal combination conditions, combined with sensory properties of the dryed product, determined the best drying conditions of this 4 material are the same, hot air temperature is 70℃, slice thickness is 5 mm,the method of cutting have rate of effect during drying,but it will have influence on the appearance of dry products, different cutting processing can be determined by the fond of people..In order to provide theoretical guidance for factory production and the prediction and monitoring of the drying process, comparing the 12 kinds of thin layer drying models, based on the comprehensive analysis of fitting and the mean square, this four kinds of materials all can be used a same model, Modified Henderson and Pabis model, to express drying process. Using outside of the model simulation data to verify this model, the results show that the model can describe four kinds of material’s drying process well.This research proves that this four kinds of materials can be classified and unified during the research of drying process, provide the basis for classify ideology.
