This paper studied the effect of selenium in system of crab in the process of growth, including selenium enrichment in vivo effects of selenium on the crab, crab specifications, effect of selenium on the antioxidant capacity and immunity of crab, crab edible part of the impact of selenium on protein and amino acid and selenium in the metabolic process of river crab.1, in the forthcoming listing of crab crab mature sampling and detecting thecontent of selenium, experimental group and control group randomly selected 30 crab, crab(male and female) of selenium enriched edible part of selenium content of 0.4-1 mg/kg, the average than the ordinary crab in edible parts of seleniumcontent of at least the lifting two times.2, on Eriocheir sinensis organic selenium supplement can improve itsspecifications in a certain extent. In theory, of selenium enriched nutrition strengthening can enhance t-he immunity of the crab, enhance its ability to adapt to the environment, reduce the stress response, so as to promote the healthygrowth of Chinese mitten crab, supplemented with organic selenium has positive effecton crab specifications in the same growth environment.3, through the strengthening of selenium enriched nutrition can significantly improve the GSH-Px, AKP activity in serum of Chinese Mitten Crab Eriocheir sinensis(P<0.05), SOD and LZM activity rises, MDA has a decreasing trend but no significant difference.4, on Eriocheir sinensis organic selenium supplement can improve the crab meatin the human body essential amino acids, flavor amino acids, total amino acid and protein content in a certain extent(SE crab, 22.8%, 24.3%, 20.8% increase 7.1%, than ordinary crab respectively), makes the selenium rich crab taste than ordinarycrab more delicious, nutrient rich more.5, Se in the metabolic process of Eriocheir sinensis. At the beginning of the experiment, with the selenium content of crab rice feeding crab tissues also showed an upward trend, increasing the crab, crab crab legs abdomen smaller increase. At this stage, in the intake of selenium enriched rice crab crab, organicselenium after the digestion and absorption into the biological system, in addition to maintaining normal blood selenium level of crab, excessive amounts of selenium in selenium methionine and selenoprotein stored in the organization, is mainly the liver and muscle tissue, and the liver has risen even faster. Test 26 days after stop of feeding crabs meters, 26 days and 21 days of seleniumcontent in selenium content had no obvious change, indicating that the Se content of Eriocheir sinensis to achieve balance, if increasing the feeding amount of crab meters, selenium content in tissue and no obvious increasing trend of river crab. With the test, no exogenous selenium fortified crab, with its own metabolism, organic selenium its stored start consumption, decreased slowlyafter stabilized selenium content.
