Inner Mongolia region is one of the main animal husbandry province in our country, which has world famous vast grasslands and rich beef cattle breed, for the development of the beef cattle industry it has a definite advantage. Kubuqi Mongolia bullock belongs to the Mongolian cattle, perennial growing in tne area which away from factory and mining, and have characteristics of grassland desertification vegetation in northwest of Kubuqi desert.The Mongolian cow has many excellent characters, such as crude feed tolerance, Strong adaptability, higher disease resistance, in addition, Mongolia beef color was bright, beef quality is delicious, juicy, high nutritional value. In order to set up elevation system of Mongolia beef quality and cattle breeding in the process of performance improvement provide data support and scientific basis. We conducted related test.In this study, six emasculate health Mongolia cattle were selected randomly with 3-4 years from the Hangjinqiof Ordos city in Inner Mongolia grazed in Kubuqi desert, and six local Simmental cattle were selected as comparison.Separation tail vein blood serum before slaughter,longissimus dorsi between 12-13 left ribs was chosen as test samplesafter the slaughter. Then adopted routine analysis respectively, inductively coupled plasma atomic emission spectrometry, meteorological chromatography, enzyme-linked immunoassay kits, real-time fluorescence quantitative technologyrelated experiment tested and analyzed, such as Muscle nutrition composition, edible quality, blood hormone levels associated with fat metabolism and fat metabolism related genes mRNA expression level. Adopting variance analysis method to analyze the various characters of differences between two groups, the results were showed as below.1 Nutrition component:the protein and fatty content of Mongolia beef was 22.60% and 6.49%,they were higher than Simmental cattle (P>0.05). Mongolia cattle meat Dry matter, ash content, Ca、Cr、Cu、Fe、Mn、Se、Zn content were higher than Simmental (P<0.05). Amino acid sorts, EAA and TAA content were higher than Simmental cattle (P<0.05), simultaneously also higher than that of ideal model protein, but valine score was low, at 83.97%, was restrictive amino acid. palatable taste amino acid and sweet flavor amino acid contents is better than that of Simmental (P<0.05). But the ratio of palatable taste amino acid and sweet flavor amino acid contents in total amino acid was lower than that of Simmental. Mongolia cattle meat SFA content was higher than Simmental, MUFA and PUFA content is relatively high (P<0.05).Functional fatty acid content was 44.09%, significantly higher than that of Simmental. the ratio of n-6/n-3 was more reasonable than Simmental,4.38.The ratio of PUFA/SFA was 0.19, Significantly higher than that of simmental, closer to the ideal value.2 Eating quality:Mongolia beef color was wine-colored, the a value, the b* value, water holding capacity, cooked meat rate and shear force of Kubuqi Mongolia bullock were higher than Simmental cattle (P<0.05), water losing rate and pH lower than Simmental cattle (P<0.05). Mongolian cow muscle brightness L is higher than simmental (P>0.05)3 Serum hormone indices:Mongolia serum hormone indices had different with Simmental cattle.The Mongolian cattle serum thyroid stimulating hormone, IGF-land insulin concentration were higher than that of Simmental (P<0.05). But GH,, T3, ACTH, NE, GCG concentration significantly lower than that of Simmental (P<0.05)4 Fat metabolism related genes mRNA expression:Buy using The real-time fluorescence quantitative technology to determine longissimus dorsi of beef cattle fat metabolism related genes mRNA expression. The results showed that the Mongolian cattle longissimus dorsi HSL gene and t FASN gene mRNA expression was significantly higher than that of simmental (P< 0.05). PPARy gene mRNA expression level is higher than simmental (P> 0.05).
