| Gloeostereum incamatum is a kind of edible and medical fungus. As medicinal fungus, G.incarnatum has a good bacteriostatic effect on enteritis, dysentery,stomach ulcers and otherdiseases. In addition, G.incarnatum also has anti-tumor, anti-inflammatory and anti-oxidationeffects; As edible fungi, G.incarnatum has good prospects for product development.In this paper,the chemical constituents, antioxidant activity and product development ofthe fruiting body of G.incarnatum were studied,laying foundation for the better exploitation ofG.incarnatum.Seven small polar compounds were isolated and purified by silica gel columnchromatography,identified by means of physicochemical and spectraldata of (nuclear magneticresonance) NMR,(mass spectrometry)MS and HPLC. β-sitosterol,ergosterol,Mannitol,ergosterolperoxide,(E)-Butenedioic acid,1,8-dihydroxy anthraquinone and1-Oleoyl-2-linoleoyl-3-palmitoyl glycerol have been isolated from G.incarnatum fruiting bodies.β-sitosterol,(E)-Butenedioic acid,1,8-dihydroxy anthraquinone and1-Oleoyl-2-linoleoyl-3-palmitoylglycerol four compounds were isolated for the first time.The antioxidant, The petroleum ether extract, chloroform extract, ethyl acetate extract andmethanol extract layer of G.incarnatum were antioxidant evaluated by hydroxyl radical(OH)and1,1-two phenyl-2-picryl hydrazine free radical(DPPH).The results showed that fourdifferent polarity extracts all had antioxidant activity, and the scavenging of methanol extract on DPPH and OH was very high, and the antioxidant activity was positively correlated withconcentration.Product development,in this paper,3products of G.incarnatum were studied, namely cake,sweet and jelly. The processing of three products was studied by the methods of single factorand orthogonal experiments, And the best formula and optimum process were determined.1.Yuer cake: the experiment took the G.incarnatum as raw material. Firstly, pick the thehigh quality fruiting body and remove the sediment impurity on the surface; Secondly, decoctthe fruiting body and get the flour; Finally, investigate the single factor quantity of G.incarnatum flour, cake flour,egg,and baking powder, Get the best formula though the orthogonalexperiment.2.Preserved Yuer: this experiment took the G.incarnatum as raw material. First of all, pickthe high-quality fruiting body, clean, soak and cut the fruiting body into suitable size; secondly, put the treated fruiting body into the sugar solution, blanch and impregnate twice, investigate thesingle factor of sugar, lanching time and blanching temperature, then get the best formula withorthogonal experiment; Finally, dry and package it.3. Yuer jelly: this experiment took the G.incarnatum as raw material. First of all, pick thehigh-quality fruiting body;Secondly, investigate the single factor of citric acid, sugar, milk,G.incarnatum flour,find out the best formula with the orthogonal experiment;At last, cooling,packaging the semi products.In this paper, the chemical constituent of G.incarnatum was analyzed;Antioxidant activityof four different polar extracts from G.incarnatum was studied; Three new products byorthogonal experiment were developed.Obtained the best formulation and did the relevantquality standards. The results are usefull for the further study of G.incarnatum, and it has apositive effect to promote G.incarnatum consumer market. |
