Canadian edamame, the non-hybrid gene transfer, produced in Canada. Edamame are thesoybean cultivated species of Leguminous, annual herb. Its scientific name is Glycine max (L.)Merr. Green soybeans (or vegetable soybeans) is its alias name. Edamame is rich in soybeanprotein, unsaturated fatty acids, and various essential minerals, vitamins, it is more easilyabsorbed by the body and plays an important role in regulating the diet and improving thenutritional status.Diabetes (Diabetes Mellitus, DM) is a serious hazard disease to human health, more than95%of diabetes is type II diabetes. Former has done extensive research on chemicalcomposition and pharmacological effects of soybean. Soy isoflavones, soy saponins, soy proteinhave certain effects on diabetes. In this paper, ordinary edamame as the test material, wemeasured content of soy isoflavone aglycone of ordinary edamame under different processingmethods and studied anti-diabetic activity and antioxidant activity of Canadian edamamepreliminary. Thus, providing a scientific basis for the preservation and effective exploitation ofCanadian edamame. This paper studied commercially available edamame under different processing methods, determination isoflavone aglycone content of ordinary edamame by HPLC in blanching, boiling, freezing, freeze-dried, drying conditions respectively. Column:Hypersil C18(250mm×4.6mm,5μm), mobile phase:methanol-0.3%phosphoric acid solution (48:52), flow rate of0.7mL/min,detection wavelength260nm, column temperature was25℃, injection volume:20μL. Theresults showed that in the edamame samples with different processing methods, the sampleswith the highest content of soy isoflavone aglycone is in freeze-dried condition. We alsomeasured crude fat, crude protein and free amino acids of commercially available soybean andCanadian edamame according to GB2906-82, GB2905-82, NY/T1975-2010.This paper discovered Canadian edamame has therapeutic action for type2diabetes. Thisstudy made use of high-fat diet combining with STZ to induce type2diabetic mellitus (T2DM)mice model. Experimental mice were divided into five groups:control group, positive controlgroup, model group, Canadian edamame group, which Canadian edamame group was dividedinto high and low dose groups. It administered lyophilized powder of the whole Canadianedamame to T2DM mice, study the effect on fasting blood glucose level, oral glucose tolerancelevel, serum lipids, liver index, food intake, water intake, body weight. The study found thatCanadian edamame can regulatory improve the fasting blood glucose level, oral glucose tolerance level and the liver MDA level of T2DM mice and significantly reduce the food intakeof T2DM mice. All the treatment group can significantly improve TC, TG levels and on adeclining curve of drinking water, but no obvious changes. This paper evaluated the antioxidant effect in vitro of Canadian edamame by measuring theDPPH clearance rate, ABTS clearance and reducing power of different soybean samples. Theresults showed that the antioxidant effect of Canadian edamame in vitro were better than that ofordinary edamame and mature soybean.
