Peony has a long history in China, with the deepening of the study, its application value improved gradually, especially the edible value. However, compared with other edible flowers, its antioxidant capacity analysis and the choice of edible varieties also have a big gap. 11 different varieties of tree peony petals used as experimental material. Flavonoids of different varieties tree peony petals were qualitative identified using of UV spectrophotometer(UV), thin-layer chromatography(TLC), and high performance liquid chromatography; quantitative analysized using of HPLC – DAD. The total phenolic content(TPC) was determined by Folin-Ciocalteu method and the antioxidant activity with both 2, 2-diphenyl-1-picrylhydrazyl(DPPH) and ABTS scavenging assays. Provide theoretical support for selection of edible peony varieties, and judge its nutritional value according to its different color. The results showed that:1. About 9 flavonoids including 3 anthocyanins, six flavone and flavonol glycosides were described. They are Rutin, Phloridzin, Quercetin, Kaempferol, Luteolin, Apigenin, Cyanidin, Peonin, and Pelargonidin. Cyanidin, Peonin, Pelargonidin and their derivatives are main reasons for the pink, red, and purple peony flowers. However, the white, yellow and green do not contain anthocyanins.2. The total phenol and total flavonoids content assays show that the dark petals poly-phenol content is higher than the petals of light color, yellow petals also showed a higher poly-phenol content.. The highest level is purple flower. The yellow flowers followed. The white is the lowest. The flavonoids content of different varieties peony petals are significant different, but is independent of the petal color, which varied between 5.13 g / 100 g and 16.07 g / 100 g dry weight.3. The results of antioxidant capacity assays show that. The peony has high antioxidant capacity. The different varieties peony petals have markedly different antioxidant capacity and poly-phenols content. The two data sets show significant consistency. Poly-phenol compounds as the material basis for the peony has the oxidation resistance.4 While the light color flowers showed lower oxidation resistance, the dark and the yellow showed a high activity..
