With the development of the times, people are generally aware of the importanceof preventing of disease and keeping in good health. Thus, dietary supplement hasbecome the daily needs and it also has been developed into the effective means toprevent disease. In recent years, the fermented beverage of plants from Japan andTaiwan has become the new force in the dietary supplement. The Aodong fermentedbeverage used in this study was made by using60kinds of fresh fruits and vegetables,such as apples, carrots, cabbages, cucumbers, pears, mung bean sprouts, et al. Itpasses through natural fermentation for six months to become the serums, due toadopt the pollution-free raw materials, so the product has not any adverse effects.Aodong fermented beverage contains many nutrients such as functionaloligosaccharides, amino acids, organic acids. So, its effect is obvious to improve themicroecological environment in the human body, increase the immunity, anti-aging,reduce serum cholesterol and so on. In this paper, organic acid of Aodong fermentedbeverage was analyzed, the health care functions of Aodong fermented beverage wasevaluated by animal experiment, we obtained the following results:1. In this paper, the Aodong fermented beverage was a fermentation product. Itscomposition was very complicated during the fermentation process. The identificationof the compositions was very difficult. In the article study, the main organic acidscontained in the Aodong fermented beverage were identified by liquidchromatography combined with mass spectrometry. Respectively, they were caffeicacid and chlorogenic acid, chlorogenic acid methyl ester, in combination with relatedreferences, we infer that compositions were cis-caffeic acid, cis-chlorogenic acid,cis-chlorogenic acid methyl ester. The result of the study provided the health caremechanism of Aodong fermented beverage for a theoretical basis.2. D-galactose-induced damage model that was studied the effect of Aodongfermented beverage for body’s antioxidant function in mice. The result showed thatthe Aodong fermented beverage could significantly reduce malondialdehyde level ofserum and protein carbonyl level of liver in mice, and could significantly increase thelevel of glutathione and superoxide dismutase of serum in mice. It showed that theAodong fermented beverage had a good antioxidant function. 3. This article used the method of blood coagulation to study immune function ofthe Aodong fermented beverage. The Aodong fermented beverage could significantlyinhibit the growth of body weight of mice, and could significantly improve the levelof antibodies and spleen index, the Aodong fermented beverage had the effect ofhumoral immune.4. Obesity model that was studied the effect of Aodong fermented beverage forlosing weight. There was no significantly difference among these groups of rats abo utinitial weight, after feeding six weeks later, the group of rats that was fed the Aodongfermented beverage, their body weight, weight gain and fat mass were significantlylower than the model group, while there was no obvious difference between intakeand utilization rate of food. The Aodong fermented beverage could effectively inhibitweight gain and accumulation of fat in rats, so it had the effect of weight loss.The results showed that, Aodong fermented beverage had antioxidant function,humoral immune efficacy and weight loss. The research results on the biologicalactivity and application of Aodong fermented beverage provides a theoretical basis forthe further study.
