The food cultural in Hunan province has a profound history, and its "Xiang cuisine" is known as one of the Chinese eight cuisines with a history of2000years of development and more than6000dishes. In recent years, with the rapid development of economy and the increasing demand of dining out, a large number of Chinese chain restaurants who were characterized as "Xiang cuisine" have emerged. However, the overall quality of the staff, work performance and service level is not high enough, and this situation has become a problem that most enterprises are facing with. In order to solve these problems, Hunan Chinese chain restaurants have spent a lot of labors, materials and financial resources for staff training, but the desired effect is still hard to achieve. The reason is that, when they set up the training system, hardly do they take their current situation and the staff needs into consideration, which leads to the low efficiency, target and system in the process of training. Thus, through in-depth study of the existing problems of current training system in Hunan chain restaurants, this paper has designed a comprehensive training system for reference.This paper uses the method of qualitative analysis, quantitative analysis, theoretical analysis and practical analysis. And based on the modern training theory and the theory of chain management, the writer got the system of planning on Hunan Chinese chain restaurants’training system. Firstly, according to the basic characteristics of Chinese chain restaurants, the writer investigated and interviewed20Chinese chain restaurants in Hunan area and found out the5main problems existing in the current training system. Secondly, combining the characteristics of other training system model, this paper redesigned a comprehensive training system, which was composed of institution sub-system, curriculum sub-system, trainers sub-system and process sub-system. Finally, some training safeguard measures have been raised, such as improving the training ideas, strengthening the occupation career management of employees, strengthening the construction of enterprise culture and paying attention to the incentive mechanism and training risk aversion.This study hope that all the Hunan Chinese chain restaurants could get some help and guidance from this research in establishing and optimizing their training system, so that their human resources management and competitiveness can be improved; at the same time, the same type of enterprises in other area could also obtain some reference.
