Vegetable is an essential part of the residents’ food consumption, and it is influential to people’s daily life. At the same time, vegetable is also an important part of the residents’food basket, thus it plays a significant role in Beijing’s urban agricultural development. Influenced by climates, resources, eating habits and other aspects, vegetable production and consumption are characterized by its variety, region and season. Data shows that the self-sufficiency of Beijing’s vegetable is about 35%. And the vegetable consumption is mainly provided by other cities. It is meaningful and practical to make research on the vegetable consumption demands of Beijing on the basis of market. Theoretically speaking, the summary of personal characteristics of vegetable consumption behavior can provide favorable supplement to its research. Practically speaking, the essay’s research is essential to the grasp of Beijing’s vegetable consumption. At the same time, it can offer reference to other markets.The essay focuses on analyzed the factors that affect people’s consumption behaviors and explained related perspectives that influence it. The essay is developed in three parts. In the first place, it analyzed the general situation of Beijing vegetable industry and asked question. In the second place, it is to design the questionnaire and on-the-spot investigation, the analyzed of the date obtained by recycling personal characteristics and willingness of vegetable consumption behavior. At last, the paper analyzed the recovery of the questionnaire date again with the software SPSS via, the essay analyzed the factors that by Principal Component Analysis,Regression Analysis and Binary Logistic Regression analysis.The article study out that the vegetable consuming gap is narrowed between citizens and rural people in Beijing. Secondly, the convenience and distance of purchasing become the most obvious factors that affect people’s consumption. Thirdly, the number of family, the credits, safety and freshness, transportation convenience influence people’s consumption behaviors.
