In this paper, the raw material is based on the freezing Antarctic krill, through alkali soluble acid sinking method and flocculation precipitation extract the protein from the Antarctic krill, and also has been systematically studied for characteristics of the Antarctic krill protein components, nutrition and security features to enrich the Antarctic krill protein research and provide support for industrialization of the Antarctic krill protein. The main results were as follows:Alkali soluble acid sinking method is used to extract the Antarctic krill protein. By single factor and response surface test, centrifugal temperature, solid-liquid ratio, homogenate time have significant influence on the Antarctic krill protein extraction yield. Determine the process parameters of the alkali soluble acid sinking to extract the Antarctic krill protein are centrifugal temperature 4 ?, the centrifugal time 10 min, solid-liquid ratio 1:3., homogenate time 3.0min, the centrifugal rotational speed 10000 rpm, Under the optimum conditions, the extraction yield of Antarctic krill protein reached 10.81%.Using flocculation precipitation (sodium carboxymethyl cellulose) to extract the Antarctic krill protein:by single factor tests and response surface test, CMC, PH and the processing time have significant effects on the Antarctic krill protein extraction rate. The best extraction condition of the Antarctic krill protein extraction yield is:CMC addition amount 33 mg/100 mL the Antarctic krill protein solution, PH 5.0, processing time 32 min, temperature 5?. the extraction yield of Antarctic krill protein reached 9.93%.Using polypropylene acyl amine gel electroPHoresis for the Antarctic krill protein which have been extracted by desalination, decoloring and continuous accumulation extraction method to analysis the components, it founds that the Antarctic krill protein relative molecular weight is distributing in 37 000-50,000, desalination has no significant effect for the Antarctic krill protein components, decoloring has significant effects for the Antarctic krill protein, through the continuous cumulative extraction found the alkali soluble protein content is the highest in the Antarctic krill protein, others are Clear protein, alcohol soluble protein and salt soluble proteins.Determined and analyzed for the Antarctic krill protein nutrients, and also to evaluate its nutritional quality.
