In recent years,the aquaculture of tilapia and its processing capacity is increasing in China,with a production of 1.7 million tons annually.A large amount of by products,including skin,fish scales and bone were produced during processing.Fish skin and scales are rich in collagen,the development and utilization of scraps can improve the added value of tilapia.Our present study extracted collagen from tilapia skin and scales,and successfully achieve industrialization preparation.The procedure of the skin collagen was as following: 1,remove the skin pigment with 0.2 % NaOH and 1.60 % color fixative for 4 h with agitation till the skin was lightly yellow.2,wash the skin with clean water and drain,extract the collagen at 50 °C for 30 min and keep pH 6.0±0.2.The gel strength of this products was 486.21 g*cm.The procedure of the fish scales collagen was as following: 1,soak the fish scales with 0.2 % NaOH for 6 h,wash with clean water and soaked with 0.2 % HCl.2,extract the collagen at 70 °C for 2 h and kept at pH 6.5±0.2.The gel strength of this product was 753.62 g*cm.Using the collagens prepared above,it is possible to develop new products such as fish balls and tofu with adding the collagen to the minced fish products.Orthogonal test with 3 factors and 3 levels was taken to develop the products of collagen and gel strength combining with sensory evaluation.A combination of 75 % fish skin collagen and 3.0 % premixed additives were taken for the best procedure of collagen tofu and reacted for 36 h.The best procedure for collagen fish ball preparation was: 65 % collagen of fish scales,3.0 % premixed additives and reacted for 30 h.Total number of colonies for collagen fish ball and tofu was in accordance to the requirements of GB 10132-10132.The fish balls and tofu thus prepared could be digested by pepsin and trypsin in the simulated gastrointestinal fluid.The tilapia skin collagen peptone and fish scale peptone have been applied to industrial production by Xiamen Tongan Yuanshui biological technology Co.,LTD.The fish collagen tofu and collagen fish ball have been applied to production by Xiamen Tongan Yuanshui aquatic products Co.,LTD as well as Dandong Zhihong aquatic products processing Co.,LTD.
