In this paper, the conventional production technology of Gardenia yellow pigment was checked and modified. Membrane separation was used in the new technology and water was the solution. The new technology had no purification by alcohol and concentration by evaporation as well as the traditional one. The optimal condition of one pot intermittently extraction was determined by single factor experiments. The optimum extraction conditions were comminuted gardenia yellow fruit to 30-40 eye; extraction period 40 min; extraction stages 3; ratio of liquid to material 4:1, the extraction rate was 85.2%. And based on it an improved method of extraction was introduced. It was multilevel counter-flow extraction. Through clarified by Ceramic micro-filter membrane and concentrated by nanofiltration rough extraction liquid was gained. And it contained 58.1% solidity matter. The color value of it was 25.2 and the A238/A440 was 4.69. The yield of rough pigment reached 42.0%. Refinement chitin column with diameter/high was 1:20, adding sample/chitin was 1:40 and washed with water at a flow rate 0.13ml/s. The color value of the last purified Gardenia yellow pigment is 489 and the A238/A440 was about 0.19.To making the best of the Gardenia resources, the solution which gained from refining gardenia yellow was used as gardenia blue pigment reaction solution.
