Fructose syrup is a new kind of sweetener into commercial production in the 70 s, the composition of sugar is mainly fructose and glucose, fructose syrup fructose content points according to its type F-42 fructose syrup (fructose content 42% of the amount of sugar), type F-55 fructose syrup (fructose content is 55%) and fructose syrup F-90 type three (fructose content of 90%).Because of the sweetness of sucrose, fructose syrup is suitable for a variety of food and beverage processing, in recent years more and more get of consumer love and attention. This article mainly from the fructose syrup on the processing technology of working on, and the effect of fructose process principle, process flow and the key technology of fructose process, equipment, etc.Content of this research is based on corn starch as raw material, through enzymatic sugar manufacturing, to pass through the liquefaction and saccharification to membrane filtration, starch sugar from/to correspond to evaporate, the heterogeneous-F42 from cross-F42 evaporation F42 fructose syrup (output)-chromatographic separation of F90 (output)-mixed-F55 from cross-F55 evaporation F55 fructose syrup (output). This study mainly aims at the key working procedure of fructose syrup production process and key technology research. Through test study the optimum process conditions of liquefaction, the injection temperature 108?, soluble starch pH5.6-6.0.Through analyzing the different from the exchange resin for experiments, it is concluded that different types of resin to remove the conductance and the peculiar smell in the sugar solution have different degree effect, especially resin SD331 of escaping taste,2-AP of sugar solution, furfural,5 HMF removal rate as high as 99%, at the same time as the sugar liquid residence time to extend in the resin, chromaticity and isovaleraldehyde decreased less.
