Tea is one of the most widely consumed beverages in the world,since it is rich in lots of health-beneficial components.Hower,these components are not fully uitilized while in tea infusion,because of the insolubility of the majority of proteins,carbohydrates and mineras present in green tea.Since health-promoting properties of drinking green tea are increasingly recognized,such interests have been triggered by food researcher that green tea leaves can be ground into microsized powders and uitilized as a whole.Superfine comminution has been developped and widely applied in the past decades.It is well documented that microsized powders possess unique physicochemical characteristics,such as excellent dispersibility,absorptivity,dissolubility and bioactivities.These findings contribute a promising propest for developing funtional foods in the future.In this study,the following works were carried out and the results were summaried:1.Firstly,we prepared selenium-enriched green tea according to invention patent?ZL03112724.X?:a kind of production regulator and direction about Se-enriched tea leaves.Secondly,microsized selenium-enriched green tea and regular green tea were obtained using air stream pulverization,planetary ball milling and vibration milling.Results showed that the particle size of microsized selenium-enriced green tea and regular green tea were D50 = 6.038 ?m and 6.237 ?m?air stream pulverization?,D50 = 3.398 ?m and 3.462 ?m?planetary ball milling?,and D50 = 5.248 ?m and 5.821 ?m?vibration milling?,respectively.TEM morphological observation exhibited green tea particles were in small fractions with irregular shape.2.The effects of superfine comminution on main ingredients of green tea were investigated.Results showed that the dissolution of ingredients could be accelerated with decreasing particle size,meanwhile,the oxidation for some labile components,such as tea polyphenol,could be accelerated.3.The adsorption activities of cholesterol and in vitro antioxidant properties of microsized green teas were evaluated.The adsorption activities of cholesterol of microsized green teas were significantly increasing with decreasing particle size.Moreover,microsized selenium-enriched green tea exhibited stronger adsorption capacity than regular green tea.The DPPH radical scavenging ability of tested samples were decreased in the order of Trolox>microsized Se-enriched green tea>microsized regular green tea>Se-enriched green tea>regular green tea;and linoleic acid peroxidation inhibition were decreased in the order of Tolox>microsized regular green tea>regular green tea>microsized Se-enriched green tea = Se-enriched tea.4.The conditions of preparing tea polyphenol nano liposome were preliminary explored:Tea polyphenols 81 mg,egg yolk lecithin 300mg,Cholesterol 58mg,VE 16.7mg,ethanol 4.5mL,the hydration time 30min and hydration temperature 60?...
