Benzoic acid is commonly used as a preservative in food production,it is found in red date and its products,it can cause panic to consumers.Because not seen in date processing using benzoic acid class additive,a number of studies point to benzoic acid in red date is secondary metabolites in the process of their growth.Therefore,study the formation of benzoic acid in date fruit,clear the key enzyme of benzoic acid accumulation of metabolic,clarify date source and benzoic acid in the security,is the red date industry to the safe production and the key to develop,also lay a foundation for people to eat red date.In order to solve this problem,it is necessary to understand and study the changes of benzoic acid in red date growth and storage.This study on red samples,in different growth period and storage of benzoic acid and related enzyme activity were analyzed,and the objective to understand the enzymes involved in the process of growth and store to the influence of benzoic acid,for changing of benzoic acid content in red date and formation law of a preliminary study.The main conclusions of this article are:Through the experiment,benzoic acid content in the red date growth has nothing to do with the years,the red date growth of benzoic acid content change of polynomial mathematical model is established,the determination coefficient R2 were between 0.9248 ~0.9831,equation fitting precision,can be effective in the process of red date growth predict the change of benzoic acid content;The content of the date date is 8.4 times the content of jun date,which is related to the variety.Red date in the process of growth,slow growth in a rapidly growing benzoic acid content,reach the weight growth late benzoic acid content began to rapid growth,in the accumulation of maximum conversion period benzoic acid content,in the process of benzene propane metabolic PAL,C4 H 4 cl and enzyme activity are gradually increasing trend with the increase of maturity,consistent with the change of benzoic acid content,including 4 cl the highest enzyme activity,C4 H lowest enzyme activity;Red date during storage(2 ?,8 ? and normal temperature)storage conditions,the content of benzoic acid were gradually rising trend,storage time reaches a certain content of benzoic acid and began to decline,under the condition of normal temperature storage the highest content of benzoic acid,benzoic acid content is the lowest 2 ? storage conditions,benzene propane metabolic PAL,C4 H 4 cl and enzyme activities consistent with the change of benzoic acid content,including 4 cl the highest enzyme activity,C4 H enzyme activity,lowest test showed that red date growth process of benzene propane metabolism associated with benzoic acid accumulation.
