With the rapid development of science and technology information, Chinese beer industry has gained further improvement in the aspects of control technology, manufacturing equipment and product quality, In the process of making beer, fermentation is a complex process of biochemical reaction. During the fermentation process, temperature variation is the dominant factor; and the temperature control will directly affect the quality of beer. The food major of our school has an early beer production line, the equipment is so poor, and the monitoring process conducted in artificial way, also the problems like the complex structure, inconvenient upgrade and low degree of automation exit in the traditional temperature controller. Therefore, it is important to renovate the school beer production line technically, design an intelligent system of beer fermentation control, so that it can improve the production efficiency, and guarantee the quality of product.This paper mainly designed and developed the beer fermentation process monitoring platform based on Kingview system, the structure frame of beer fermentation microcomputer control system is the industrial control PC-PLC-DCS system, namely industrial control computer and programmable controller distributed computer control system, and the system contains two hierarchical structures. Upper machine uses PC centralized monitoring and management; Lower machine PLC chooses the S7-200 series programmable controller of Siemens. The communication system of upper machine and lower machine adopts RS485 communication standards. The realization of the PC interface uses the configuration software; it can provide friendly man-machine interface and convenient operation, which realizes the database management and transfer, process parameters and process curves show(print), data maintenance and so on. The system is cost-effective, reliable and practical, easy to expand, and has good monitoring effect, which can meet the technical requirement of beer fermentation production process, and improve the automation level of the beer fermentation control.Beer fermentation process is affected by many interference factors, with large inertia, lag and serious nonlinear characteristics, and the traditional control theory has showed its limitations. In view of the problems in beer fermentation temperature control, this paper put forward fuzzy PID parameters adaptive fuzzy control algorithm, which essence is fuzzy PID intelligent control algorithm based on the deviation of adjustable variables and the change trend of deviation. This algorithm is adaptable and flexible, and it has high control precision, strong ability of adaption and anti-interference, which makes the fluctuation of beer production becomes small, and the beer quality becomes stable. Finally through MATLAB simulation this paper proved that this control algorithm has not only simple structure, small static error, fast dynamic response, but the characteristics of self-learning ability.
