In this paper,the multi-enzymatic method is used to activate the dietary fiber in the grape skin residue after the winemaking,which can increase the content of water-soluble dietary fiber.The optimal ratio of enzyme and enzyme was 1: 4,the amount of enzyme was 1.2%,the temperature of enzyme was 60 ?.The optimum conditions were as follows: enzyme dosage was 0.3%,single factor and orthogonal experiment,,And the optimum extraction time was 120 min.And preparation of water-soluble dietary fiber is added to the yogurt products,through to the white granulated sugar usage,dietary fiber,usage and quantity of single factor experiment and orthogonal experiment,the sugar content of 7.5%,dietary fiber content is 3%,bacteria content 2.5% when preparation of yogurt best effect.The experimental results show that affect the quality of grape skin residue dietary fiber yoghurt senses the main factor is the amount of sugar added,followed by yeast inoculation quantity;And the main factors influencing the fermentation period is dietary fiber usage,followed by strain inoculation amount.
