The main active substances of honey are carbohydrates and water,but also contain some less content of minerals,vitamins,amino acids,proteins,lipids and polyphenols etc.It is generally known that the functions of honey contain anti-bacterial,anti-inflammatory,adjusting neural function,reducing blood pressure and other biological functions.As far as some studies shows now,the biological functions of honey are associated with their polyphenols,Meanwhile found that it is important significance polyphenols of honey to quality and functional activity.To investigate the polyphenols substances and ACE enzyme activity of buckwheat honey,Zambia and linden honey with HPLC and LC-MS.The results shown are as follows:1.Thirteen kinds of polyphenols were identified from 15 samples of linden honey collected from 15 different habitats,seven kinds of polyphenols were detected in almost all samples such as:p-coumaric acid,methyl succinate,anti-abscisic acid,cis,trans-abscisic acid,cinnamic acid,chrysin and 4-(1-methylvinyl)-cyclohexane-1,3-dicarboxylic acid.Among them,4-(1-methyl vinyl)-cyclohexane-1,3-dicarboxylic acid is a sign component of linden honey.The commercial honey is only five brands,the general quality linden honey is four brands,the other 6 brands linden honey is poor quality contain rapeseed honey mixture and 2 brands with syrup blending.2.Eleven kinds of polyphenols were identified from 5 buckwheat honey samples collected from 5 different origins,all polyphenols were detected in almost samples including 4-hydroxybenzoic acid,p-coumaric acid,2-hydroxybenzaldehyde,anti-abscisic acid,cis,anti-abscisic acid,safflower acid,gallic acid,vanillin,isoferuric acid and benzoic acid.The safflower was found is first in Chinese buckwheat honey.The 2 brands were high grade and 4 brands is poor grade in 6 brands buckwheat honey with polyphenols component analysis method.2 brands samples were rape honey mixture and 2 brands samples were blends of syrup.3.We get the chromatogram of Zambia honey and qualitatively and quantitatively analyze the main polyphenols with HPLC and LC-MS.seven ingredients were identified such as:p-coumaric acid,erucic acid,anti,anti-abscisic acid,cis,anti-abscisic acid,kaempferol,kain and pheromone-3-acetate.The p-coumaric acid maybe inhibited Staphylococcus aureus,Pseudomonas aeruginosa.The chrysin can anti-anxiety,anti-cancer function.The functions of antibacterial,sedative and anti-cancer were shown in Zambia honey.4.The significant inhibitory function of Zambia honey on ACE enzyme activity were found with HPLC analysis.Therefore,it is speculated that Zambia honey can reduce blood pressure,which provides a theoretical basis for the development of Zambia's characteristic honey.
