Recently,with the rapid development of Chinese economics,more and more people c onsider the swill-cooked dirty oil as one of the concerned topics about the food safety.Many of the illegal businessmen purchase the waste cooking oil,which is hard to distin guish by means of our sense organs after being extracted and purified.Now,without an effective national industrial standards of distinguish the swill-cooked dirty oil,there is a r esearch significance to seek for an useful method to identify the swill-cooked dirty oil.This project which is based on the healthy oil and waste cooking oil's detection of physical-chemical indexes,on account of the techniques fusion ideology,combining multis pectral analysis with optical coherence tomography to do comprehensive and effective re search on varieties oil.Main technologies include Fourier transform infrared spectroscop y,ultraviolet spectrometer and optical coherence tomography.The theoretical and experi mental studies of this subject results as follows:1.According to the national standard methods,Tested sensory property of waste coo king oil,lard oil and another four types of normal oil,as well as their physical-chemic al index,which including moisture content,acid value,iodine number,peroxide value a nd refractive index.The testing result is far from the national standard.2.Seven kinds of oil were detected on Fourier transform spectroscopy method.Tested each oil sample with tungsten lamp and 365nmultravioletflashlight(taking He-Ne laser d evice as reference illumination)and meanwhile,gathered the spectral information of samp les from different places,such as in the front of detector and in the front of light sour ce.Different kinds of edible vegetable oil has similar Fourier Transform Infrared Spectros copy.The relative intensity of oil samples that were tested before the illumination are str onger than the detector.With the illumination of 365nmultravioletflashlight,observed tha t the spectrometer of waste cooking oil arise two small characteristic peak,which not b e seen during anther two normal oil samples.The above mentioned can be used as fun damental basis while testing swill-cookeddirtyoil.3.The adulteration of oil and four normal oil by ultraviolet spectrometer method.Fr om ultraviolet visible region to near infrared region,measured transmittance of samples in glass and colorimetric dish.Waste cooking oil has great differences of absorption lin es between different containers,and the transmittance of waste cooking oil is lower tha n other oil.The absorbency of lard is higher than others during 185nm to 1700nm.Nor mal oil's absorbency is higher than impure oil.According to the spectrometer,it is kno wn that the maximum transmittance and the minimum transmittance of all kinds of oil,which provides a fundamental bases to identifying and analyzing oil content.4.Study on liquid surface morphology of different oil samples at different temperatu re by optical coherence tomography method.During the temperature of 0??10??16??26??35?,injected oil samples to bullet shells and glass.Put them to tomography scan in 2D mode.Using Matlab to get samples' curve-fitting function,and in the mean time,testing center oil film thickness.By testing oil tomography,it will contribute to the co mprehensive research of oil content.The multispectral analysis and the optical coherence tomography has its own advant ages with applying.By using Fourier transform infrared spectroscopy and ultraviolet spe ctrometer to test the samples,the otherness features about different kinds of oil's spectral information can be figured out.Adopting optical coherence tomography to analyze the tomographic morphology of different types of oil,the relationships of function coefficien t value among the samples can be established,which provide much more abundant study ing basis for the swill-cooked dirty oil test.
