Taking Snow Peas as experimental material,studying the heat and mass transfer in the process of controlled atmosphere preservation,discussing the effect of various factors on storage process.The controlled atmosphere storage has a lot of advantages,effectively prolong the shelf life,combines with vacuum pro-cooling,cooling fast and storage effect very well.Based on the experimental and simulation,combined with the literature,the most suitable storage temperature,gas volume ratio and other factors.This paper briefly introduces the development status of storage technology at home and abroad,briefly introduces the principle and method of modified atmosphere storage,analyzes the main parameters of modified atmosphere storage:temperature and gas concentration,analyzes different factors on cooling and storage effect in different factors,and finds main factors of different stages and lays foundation for practice.The changes of water and temperature of Snow peas surface,internal moisture and temperature were analyzed theoretically,and the preliminary physical model and mathematical model were established on the basis of experiments.Using the numerical calculation method,the cooling process is simulated and calculated,the change of the surface and central temperature of the chuguo is calculated.And the whole cooling process is simulated by the finite element software ANSYS,and the results are compared.According to the experimental data,analysis of storage effect under different storage conditions,factors such as temperature,volume ratio of speed,the weightlessness rate of breathing,the influence of the decay rate and so on.Finally,it is concluded that snow peas in controlled atmosphere storage under the condition of reasonable storage parameters.
