In this paper,the effects of temperature,humidity,gas composition and calyx of the slurry on the cold storage and preservation of Physalis pubescens were studied by conducting heat and mass transfer analysis,as well as experim ental test on the storage process of Physalis pubescens.The atmosphere conditioning environment suitable for the storage of the Physalis pubescens was investigated to extend the storage of Physalis pubescens and decrease the loss of the slurry in the storage process.Based on the theoretical analysis of heat and mass transfer,the change of internal temperature,water migration and loss changing over temperature were analyzed.The mathematical model was established,and the temperature curve was calculated by programming.FLUENT was used to simulate the cooling process of the Physalis pubescens,and the internal temperature distribution of the slurry at different time points could be directly observed on the image.The water content,hardness,vitamin C content,soluble solids content,respiration rate and decay rate of the slurry under different storage conditions were tested to quality slurry,and a more reasonable storage solution was obtained.Furthermore,the theoretical analysis of the heat and mass transfer process of the slurry was verified.
