In early April in 2002,toxicological evaluation of acrylamide were deeply studied by researchers in fried and baked potatoes and grains food.Acrylamide has general toxicity,neurotoxicity,reproductive toxicity and genetic toxicity.etc and potential carcinogenic.Therefore,to further study the mechanism of acrylamide formation,its risk assessment,and the inhibition mechanisms is very significant.It has also become a research hotspot for various researchers in recent years.Biological antioxidant is a kind of substances extracted from natural plant and has strong antioxidant activities.Most biological antioxidants can improve microcirculation,improve cardiac and cerebral ischemia and have lipid-lowering and anti-inflammatory and anticancer activity functions.The inhibition effects of biological antioxidants on acrylamide has also become the focus of the study.This paper studies the total antioxidant capacity of four kinds of antioxidants(rhodiola extracts,puerarin extracts,grape seed extracts and ginger extracts),and their inhibitory effects on acrylamide contents in fructose-asparagine model systems.This paper mainly obtains the following research results:(1)In different oxidation system,Rhodiola extracts antioxidant capacity are basically the same,in the determination of activity concentrations in the range of 0.4mg/m L to 0.6mg/m L,with DPPH method,ABTS+ method,clear the two adjacent Orthophenanthroline-Fe2+ reduction method to measure the rhodiola extracts rate was 30% to about 80%;rhodiola extracts can inhibit the formation of acrylamide in fructose-asparagine Maillard model system.Its inhibitory effect on 0.05%-0.1% and 0.5%-1.0% in the concentration range is relatively good;(2)In different oxidation system,Pueraria extracts antioxidant capacity is basically the same,in the determination of activity concentrations in the range of 5mg/m L to 20mg/m L,with DPPH method,ABTS+ method,clear the two adjacent Orthophenanthroline-Fe2+ reduction method to measure the rhodiola extract rate was 30% to 70%.Pueraria extract has a certain dosage effect of fructose-asparagine inhibition of acrylamide in system simulation.The inhibition effect was very significant between the mass fraction of 0.05%-1%;(3)In different oxidation system,the antioxidant capacity of grape seed extracts are basically the same,in the determination of activity concentrations in the range of 2mg/m L to 10mg/m L,with DPPH method,ABTS+ method,clear the two adjacent Orthophenanthroline-Fe2+ reduction method to measure the grape seed extracts rate was more than 40% to 60%.Inhibition of Grape seed extracts on acrylamide formation in the fructose-asparagine model system was strong when the mass fraction was 0.25%;(4)In different oxidation system,ginger extracts antioxidant capacity is basically the same,in the determination of activity concentrations in the range of 20mg/m L to 30mg/m L,with DPPH method,ABTS+ method,clear the two adjacent Orthophenanthroline-Fe2+ reduction method to measure the ginger extract rate was 30% to 50%.Ginger extracts played an inhibitory effect on the the formation of acrylamide in fructose-asparagine systems.The relationship between the added mass fraction and acrylamide concentration close to a linear curve.The linear equation was y=-1.5286x+10.1(R2=0.9751),the inhibitory effect of ginger extracts is the weakest in the 4 kinds of biological antioxidants,but the inhibitory effect is relatively stable.
