Potatoes are the forth largest crop in the word.In recent years,potatoes are widely planted in the world.However,the processing of potatoes is still not mechanized,which led to a low production efficiency.The purpose of this study is to provide a new way for rapid peeling and continuous processing of potatoes.This research is beneficial to a design of the product lines for potatoes peeling and slicing,to improve the labor productivity,to reduce the processing costs,to enforce the international competitiveness of China's potatoes industry and to promote the sustainable development for potatoes processing industry.In this study,based on the demand of potatoes cleaning and peeling,a continuously potato peeling machine which integrated the functions of cleaning and peeling was designed and manufactured.The main contents of the study are as follows:(1)The basic physical properties and mechanical properties of potatoes were analyzed and the correlation between mechanical properties and physical and chemical indexes of potatoes were studied.According to the mechanical properties of different varieties potatoes along to different directions of a potato,the compression testes were carried out to provide the theoretical basis and data for potatoes peeling process.(2)Based on the analysis of mechanical property of potatoes and the existing equipment for peeling other crops,the paper puts forward a technical scheme of continuous peeling and design a continuous peeling machine with brushes.A 3D model of the machine was drawn,and a prototype was completed.(3)Based on the single factor analysis of potatoes peeling equipment and the design of feeding device,a method of peeling rate was put forward to provide the basis for the corresponding surface test in the next chapter.(4)An analysis of the corresponding surface testes of three factors and three levels was carried out on the factors to get the best peeling process characters to verify the effects of the peeling results of the machine.The results showed that when the rotational speed of the drum was 18 rpm,the height difference of the drum was 15 mm,and the feeding amount was up to 39kg/min,the peeling effect was at the best,i.e.the average peeling rate was about 80.93%.Through the research and testes,we found that the improved continuous potatoes peeler has the advantages of stable and reliable performance,high peeling rate and simple maintenance and it has realized the high efficiency and low loss continuous operation of the potatoes peeling.Based on lots of experiments,the optimum parameters of potato peeling machine were obtained,which provided an important theoretical basis for the peeling and processing equipment of potatoes.
