A lot of muskmelon planted in Northwest,but the Northwest region is far from the the central city and the eastern coastal ports.In order to reduce the mechanical damage caused by the vibrating action during the transporting process and the deterioration of the quality during storage.This paper,melon was used as the research object.By shaking table to simulate the actual vibration frequency in the process of transportation,to explore the influence of honeydew melon damage during storage,rheological properties and quality and structure characteristics in different frequency vibration and vibration time.And temperature on the melons resonance frequency and the influence of acceleration transmissibility.The rusults show that,1.Honeydew melon cell damage,loss of cell SAP,cellular wilting,cell separation caused by vibration.Honeydew melon cell membrane permeability increased significantly during the storage period by vibration.Different vibration frequency of the cell membrane damage,and low frequency effect is obvious.With the increase of vibration time,cell membrane permeability increased.2.Hardness,elasticity,cohesiveness and chewiness of honeydew melon pulp decreased obviously by vibration.Different vibration frequency on the influence of quality and structure characteristics of melon.Experimental 6 Hz and 9 Hz in the vibration frequency,honeydew melon of hardness,elasticity.cohesiveness and chewiness decreased the most.And with the increase of vibration time,the more obvious influence of the structure characteristics.Honeydew melon pulp chewiness decreased and quality decline by vibration.And the more obvious with the increase of time effect.3.The stress relaxation variation increases,the stress relaxation time shortened and balance the reduced modulus of elasticity by vibration.Different impact of different vibration frequency.The most obvious under low frequency,the longer the vibration influence,the more obvious.4.The acceletation transfer ratio is different in different temperatures,the acceleration transmissibility number is 1.2 at 25?,and the number is 1.03 at 16?.The acceleration transmissibility does not increase with the increase temperature.The temperature change will not change the resonance frequencies of honeydew melon.The resonant frequency of melon is 50.46?50.93Hz.
