Millet is one of the main grains in the north.Its nutrients is variety,the nutrient content is rich.It has medicine value,by the people of all ages.In recent years,some millet deep processing products on the market,but millet in the breakfast powder utilization ratio is low,and no fruit ingredients join in the millet fast food.Therefore,this article for this problem,millet as the main raw material,adding a biologically active ingredients of the grape skin,developed a specific efficacy of millet grain powder for breakfast powder.The results of the study are as follows:(1)Breakfast powder formula optimization: Millet as the main raw material,adding grape skin this fruit ingredients,and adding soybeans and walnuts from the nutritional point of view,developed a ready-to-eat grains breakfast powder.Through mixing in the design 8 of the optimal design method,studied the influence of the proportion of each component in the formulation on the sensory quality.The regression model between the composition ratio and the sensory quality was established,and the interaction effect of each component was analyzed.The optimum formula is: 27.76% millet,20.00% of soybean,19.70% of walnut,5.00% of grape skin,24.44% of white sugar and 3.00% of xanthan gum.(2)Antioxidant effect of breakfast powder: The effects of breakfast powder on the scavenging ability of DPPH free radical,hydroxyl radical,ABTS free radical and nitrite,and the effect of blood lipid and the influence of relevant oxidation index in hyperlipidemia mice were investigated.The results showed that breakfast powder could effectively remove DPPH free radical,hydroxyl radical,ABTS free radical,especially DPPH free radicals is the most significant,which indicated that breakfast powder has the oxidation resistance,for different free radicals have clearance ability.Breakfast powder can remove nitrite,reduce the damage caused by nitrite.For hyperlipidemia model mice,breakfast powder can reduce the total cholesterol,triglyceride and low density lipoprotein cholesterol in the serum of the model groups,increase the content of high density lipoprotein cholesterol,adjusting the mice with high fat feedstuff with dyslipidemia.Breakfast powder can also increase the activity of superoxide dismutase and reduced glutathione content,decrease the content of malondialdehyde in liver,kidney,heart and spleen of hyperlipidemia mice,through the activity of antioxidant system to reduce the damage of high fat diet in mice organs.These results indicate that breakfast powder has antioxidant efficacy in vitro and in vivo.(3)Antagonistic effect of functional breakfast powder on mouse injury induced by arsenic exposure: mice were exposed to water containing 10 ppm arsenic for 6 weeks,at the same time 50% concentration of breakfast powder or 180 mg/L anthocyanin was intervened.After the end of the experiment,the activities of superoxide dismutase and catalase,the contents of reduced glutathione and malondialdehyde were measured in the liver,kidney and testis,sperm deformity and tissue sections were observed.The results showed that the activity of superoxide dismutase and catalase and the content of reducing glutathione were higher in two intervention groups than that in arsenic group,and the content of malondialdehyde was lower than that of arsenic group.The intervention group reduced sperm deformity and tissue structure effects,indicating that the two intervention groups could alleviate arsenic toxicity.The effect of breakfast powder on hyperlipidemia model mice can reduce the damage caused by hyperlipidemia by regulating the abnormal blood lipid and the related oxidative index of tissue.The effects of breakfast powder on arsenic exposure in mice can relieve arsenic toxicity and provide a reference for alleviating arsenic toxicity through diet.
