China is a country with the largest number of tea germplasm resources and the most rich genetic diversity all over the world.Yunnan province has a unique climate and a long kind of tea history.So,Yunnan province is the key area of our country's research on tea germplasm resources.Yunnan large leaf tea germplasm has rich substances,could be the excellent materials of excellent broken black tea.The excellent broken black tea made by large leaf tea germplasm could be the foundation of getting outstanding competition in international tea market.In this paper,we used the Yunnan large leaf tea germplasm resources(Yunkang10,Yunkang14,Yunkang27,Yunkang37,Yunkang43,Yunchahong1,Yunchahong2,Yunchahong3,Zijuan)as our test materials,threw the determination of these tea resources fresh leaf's and broken black tea's biochemical components contents,broken black tea's pigments contents and proportions,tea sensory evaluation,we could get the preliminary analysis about the relationship between the Yunnan large leaf tea germplasm resources' biochemical components and the quality of broken black tea.Thus we could discuss the influence on broken black tea's quality made by Yunnan large leaf tea germplasm resources fresh leaf's biochemical components.At last,we could get the characteristic index of the varieties that suitable for high quality broken black's fresh tea leave's biochemical components,screen the optimum system of tea varieties that could make broken black tea,In brief,provided the theory basis of using the Yunnan large leaf tea germplasm resources to improve the broken black tea's quality.Comprehensive analysis showed below:1,The phenol ammonia could directly prove the tea germplasm resources' suitability.The Yunnan large leaf tea germplasm resources used by this paper had rich biochemical components and high contents,these varieties' fresh tea's had absolute high tea polyphenols and amino acids contents,which were in the right range of the suitability of black tea's date.Among them,Yunkang 43,Yunchahong1,Yunchahong3,Zijuan's phenol ammonia were higher than other varieties.2,The biochemical components of Yunkang43,Yunchahong1,Yunchahong3,Zijuan were rich and high,the corresponding broken black tea's theaflavin level is high,comprehensive quality outstanding,so these varieties were the better varieties to make the Yunnan broken black tea.3,The excellent broken black tea varieties' fresh leaf's biochemical components' determination amount was:In spring,the water extracts are 49.15%-50.16%,the caffeines are 4.29%-4.72%,the tea polyphenols are 34.61%-35.95%,the amino acids are2.02%-2.66%;In summer,the water extracts are 47.98%-50.65%,the caffeines are4.12%-4.93%,the tea polyphenols are 36.58%-38.22%,the amino acids are 1.62%-1.86%;In fall,the water extracts are 37.53%-38.95%,the caffeines are 2.40%-2.98%,the tea polyphenols are 29.39%-33.69%,the amino acids are 1.40%-1.66%.4,In spring and summer,Yunnan tea large leaf germplasm resources fresh leaves' biochemical components contents were higher than that in fall,corresponding broken black tea's quality was better than that in fall.In a word,the spring and summer were the better seasons to make the Yunnan broken black tea.5,In this paper,among the 9 varieties' fresh leaves' biochemical components contents,we can found that the caffeines and the tea polyphenols contents had the highest correlation with the corresponding broken black tea's sensory evaluation.In spring,the correlation between caffeines and broken black tea's sensory evaluation is prominent.In summer,the tea correlation between tea polyphenols ans broken black tea's sensory evaluation is prominent.Through this paper's research,we can find out the 9 varieties' fresh leave's biochemical components contents,the broken black tea's pigments contents and proportion,the broken black tea's biochemical components contents and their sensory evaluation.Through the results analysis,we can state the relationship between the fresh leaves' biochemical components contents and the broken black tea's pigments contents and proportion,the relationship between the fresh leaves' biochemical components contents and the broken black tea's biochemical components contents,the relationship between the fresh leaves' biochemical components contents and the broken black tea's sensory evaluation.Through this paper's study,we can provide the theory basis for screening the Yunnan large leaf tea germplasm resources to make the excellent broken black tea and contribute to improving Yunnan broken black tea's quality.
