Potato and potato(Solanum tuberosum l.)belongs to the nightshade family(Solanaceae).Its high yield and planting area and output ranks first in the world.Its root nutrition rich(low fat,high content of VC,contain more minerals,trace elements and amino acids,high content of magnesium and potassium,lysine and tryptophan),grain food combination,is the indispensable material in the human diet,is better than that of rice,noodles,have the laudatory title of "the second meal".But 90% of potato in China for cooking and eating directly,only about 5% of the fresh taro for French fries,potato chips,flour and starch processing,and part of the processing enterprises starts and processing capacity.In addition,Chinese yam,mainly fresh pin required for storage.But the storage way is simple,mainly mountain hoard,and cold storage is used to save taro,storage in the process of using antistaling agent and bud inhibitors,etc.According to statistics,long yam due to water loss during storage,bud,disease epidemic causes such as loss of 15% ~ 30%.High voltage is a kind of based on high voltage electric field drying technology to faint from stress interact with water,the principle of the development of new drying technology,with its unique room temperature drying characteristics,particularly suitable for drying of thermal sensitive material,on the colour and lustre of yams,nutrition ingredient and so on all has the good effect.High voltage to faint from stress drying technology is not only applicable to Chinese medicine yinpian,drugs and biological material is dry,meet their corresponding GMP standards,not a loss on its effective components,and is suitable for the food,fruits,agriculture,forestry,animal husbandry,vice,fishing,native products and vegetables dehydration,can effectively keep the color and nutrition,and is suitable for drying grains and seeds.So high voltage to faint from stress drying technology has broad application prospects.In view of the problem this paper explained,according to the principle of food science,developing potato bud suppression research:[1].commonly used detection method,this paper discusses physiological and biochemical characteristics of yams,respectively with reducing sugars,amino acids,protein,vitamin C and gamma aminobutyric acid,providing theoretical basis for creating yam efficient bud suppression technology[2].[yam dynamic analysis of the change of enzyme activity,and the correlation between each other,explore the specific enzyme activity affect yam germination[3].by saturated salt solution of potassium sulfate process,discusses the change of its concentration and the time after processing yams...
