With the continuous development of China's economy,the pace of building a moderately prosperous society has gradually accelerated and the people's demand for food has become increasingly stringent.In the process of consumption,consumers are no longer just consider the price and taste,they pay more attention to food nutrition and food safety.Although the state has constantly improved food related laws and regulations and strengthened the production and market supervision,but in recent years,food safety incidents still occur frequently.This makes consumers more worries about food safety and even fear.Therefore,food safety problems still need to be solved urgently and it is particularly important to strengthen food safety management in food production and processing enterprises.HACCP food safety management system(hereinafter referred to as HACCP system)is a relatively perfect system so far.Through the hazard evaluation,It identifies hazards early and formulates corresponding control measures to ensure food safety.After many years of theoretical and practical verification,it has been recognized by most food processing enterprises.From the selection and acceptance of raw and auxiliary materials to production,processing,storage,transportation as well as the whole process of production,hazard of each processing procedure is analyzed first,then the critical control points are determined.It establishes effective preventive measures to eliminate possible substandard products in production and processing,thereby reducing the risk of enterprises producing and selling unsafe food.HACCP system has been studied by domestic and foreign food enterprises,experts and scholars for many years.It has been recognized as the most appropriate management system for food safety control by various countries and government agencies.UM company is mainly engaged in research and development,production and sales of frozen drinks,which belongs to cold drinks business unit of a large dairy enterprise group.Through the implementation and reconstruction of the HACCP program,the company identifies key control points in the manufacturing process and develops control measures for key control points.Food safety continues to improve.The risk of food safety is effectively reduced.This paper takes UM company as a case.It has studied and evaluated the application process and application effect of HACCP system in this field.Firstly,the concept,principle and implementation steps of HACCP system are expounded in this paper and then the application status of HACCP system in UM company is carefully investigated.It has studied its implementation path and method and found out the problems existing in the implementation process.It also gave some suggestions for improvement.The significance of the research is to formulate a high efficient operation plan of HACCP system for UM company and provide reference for the application of HACCP system in the whole industry of it.
