Hunger breeds discontentment.Food is the basis for human survival and development.It is the social responsibility of the food industry to protect the health and safety of people by ensuring good food hygiene and safety.Because of the particularity of aviation food,its safety is particularly important.HACCP focuses on the field of risks,assessment and prevention.Through the assessment of safety risk and hazard analysis of the entire process of food production,processing,distribution,and consumption to identify the links of most likely risk or harms for human beings,Then to reduce the chance of pathogenic microorganisms invading the food production process by finding out the key control points and taking the necessary measures,so that the food hygiene can achieve the expected safety standard.The introduction of HACCP system can improve the supervision mechanism of aviation food and reduce the risk of aviation food safety as well.This study selected two airlines in Hangzhou Xiaoshan International Airport,which have established HACCP system,to carry out microbiological tests on different types of aviation food products produced in 2010-2016.A total of 631 samples of food products have been random inspected and the results shown that,the average pass rate of airline food from company A and B were 95.58%and 86.31%respectively.The overall inspection results of airline food was satisfied,but bacterial colony and coliform was detected in some samples.Compared with other category samples,noodles and cold meat had lower qualification rate.Therefore,we should strengthen the supervision of related products mainly through strictly examining the qualification of the importer,standardizing its operational prodedures,and improving the manufacturing session of pasta class which may be contaminated.Since the introduction of HACCP management system,the effectiveness of Hangzhou Airport Port to ensure aviation food safety has been analized.The HACCP system is adopted by the aviation food production enterprises for management,and the port inspection and quarantine authority applies the HACCP principle to carry out the key point control in the port health supervision:two-pronged approach to maximize the avoidance of aviation food hygiene and safety incidents.This study shows that the application of HACCP principles in air catering enterprises and port health supervision is an inevitable trend and is the double guarantee of aviation food safety.Besides,HACCP system can help catering companies establish a reasonable and effective food safety control system,improve the relevant links of health supervision work and enhance the work efficiency of aviation food hygiene supervision and law enforcement.
